32 oz. frozen tater tots or potato gems
1.5 lbs. boneless skinless chicken breasts (diced) (This is about 2 large chicken breasts)
10 slices bacon (cooked and crumbled (divided))
21 oz. cream of chicken soup ((two 10.5-oz. cans))
1/2 cup milk
1/2 tsp. onion powder
1/2 tsp. garlic powder
1/4 tsp. salt
1/4 tsp. pepper
1 small yellow onion (diced)
8 oz. shredded sharp cheese ((2 cups))
1/4 cup green onions

Steps:

  • Place half of the tater tots in the bottom of the slow cooker. Spread them out so they are an even layer.
  • Add the cubed chicken in a layer over the tots. Sprinkle over half of the bacon.
  • In a large bowl, whisk together the cream of chicken soup, milk, salt, pepper, onion powder, garlic powder and diced onion.
  • Pour this mixture over the tots, chicken and bacon.
  • Add remaining tots, arrange them neatly if desired.
  • Sprinkle over the cheese.
  • Place the lid on the slow cooker and cook on LOW for 5 hours without opening the lid during the cooking time.
  • When the cooking time is done add the remaining bacon and sprinkle over the green onion.

4 ounces bacon, cut into 1-inch pieces
1 pound skinless chicken breasts, cut into bite size pieces
salt and freshly ground black pepper to taste
1 (16 ounce) package frozen bite-size potato nuggets (such as Tater Tots®)
1 ½ cups grated Colby cheese
1 ½ slices grated Monterey Jack cheese
¾ cup milk

Steps:

  • Place bacon pieces in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon on paper towels. Crumble once cool enough to handle.
  • Season chicken pieces lightly with salt and pepper.
  • Grease the bottom of a slow cooker with bacon grease and layer 1/2 of the potato nuggets on the bottom. Sprinkle with 1/2 of the bacon bits. Mix Colby cheese and Monterey Jack cheese together in a bowl and sprinkle 1/3 of the cheese mixture on top. Add chicken in 1 layer and top with 1/2 of the remaining cheese mixture. Sprinkle with remaining bacon bits and top with remaining potato nuggets. Sprinkle rest of the cheese mixture on top and pour milk over everything.

Over the years I have received so many request for this recipe, so here it is. This is a recipe passed down to me from my grandmother. I'm not sure where it originated from, but she put her own special touches to it and man is it mouth-watering. I could eat this for a week straight and each day it taste better than the day before.

3 boneless chicken breasts
1 (10 1/2 ounce) can cream of chicken soup
1/4 cup diced celery
1/2 cup diced onion
milk (optional)
1 cup frozen peas
2 tablespoons Miracle Whip
2 cups shredded cheddar cheese
24 ounces frozen tater tots

Steps:

  • Boil chicken, celery, onion in 3 cups of water.
  • Remove chicken when cooked through and dice into bite size pieces.
  • Remove celery and onions from pot, but keep the stock in pot.
  • Continue boiling stock from chicken, celery and onions until it reduces to 1 cup (if you reduce stock to less than 1 cup, not a problem, add milk to measuring cup with stock to equal 1 cup).
  • Stir together in a bowl chicken, onion, celery, frozen peas, Miracle Whip, cream of chicken soup and 1 cup of reduced stock.
  • Pour chicken mixture into greased 9x13-inch baking dish.
  • Sprinkle with 2 cups shredded cheese (I've tried other cheeses, but cheddar seems to hit the spot for me).
  • Top with tater tots.
  • Bake at 350°F for 45 minutes.

3 garlic cloves, minced

  • In a large skillet cook beef over medium-high heat until no longer pink, 5-6 minutes, breaking into crumbles; drain and transfer to a 5-qt. slow cooker. 10 3/4 oz. can cream of chicken soup
12 oz. can evaporated milk
1/2 teaspoon ground black pepper
1 teaspoon garlic powder
1 1/2 teaspoons seasoned salt
3 cups shredded cheddar cheese
10 oz. can of chicken breast chunks, drained
10 or 11 oz. package frozen broccoli florets, thawed and drained
regular size bag (28 - 32 oz.) of frozen tater tots (I used crispy crowns--same thing, just smaller in size)

Steps:

  • Mix the soup, milk and seasoning in a large mixing bowl. Add 2 cups of the cheese, the chicken and broccoli and stir to incorporate. You can now add the tater tots and stir. Make sure that all the tater tots are coated with the mixture and incorporated well. Line a 3 - 4 quart crock pot with aluminum foil. Just because this has a lot of cheese and I wanted an easy clean up I also used a slow cooker liner. Pour the mixture into the lined crock pot. Place folded paper towels on top of the crock pot and secure with the lid. This will keep the extra condensation from the lid during the cooking process from watering down the dish. Cook on low for 5 - 6 hours or on high for 3 - 3 1/2 hours. Around 15 - 30 minutes before the end of cook time sprinkle the remaining cheese evenly over the top. This will melt the cheese nicely. If you turn the crock pot off and remove the crockery (if yours has a removable crock) the casserole will start to cool down and set faster.

This is a simple throw-together dish I came up with that is great for a Sunday after-church meal. Note: You can fry your own bacon for this recipe. I like the taste of bacon but cannot handle the lingering smell it leaves in the house when you fry it, so I just buy the jarred bacon for the few times a year I use it.

1 (32 ounce) bag tater tots
0.5 (3 ounce) jar bacon bits (I used Hormel brand)
5 boneless skinless chicken breasts
1 1/2 cups grated colby cheese
1 1/2 cups grated monterey jack pepper cheese
3/4 cup milk
salt and pepper

Steps:

  • Grease the bottom of the crock pot.
  • Layer 1/2 the tater tots on the bottom of the pot.
  • Sprinkle with 1/4 of the jar of bacon bits.

  • If you prefer a softer tater tot topping, thaw the tater tots before baking.
  • To make the casserole ahead of time, cook the chicken and vegetables according to the recipe and then refrigerate. When ready to bake, thaw the mixture and top with tater tots and cheese. Bake until the tater tots are golden brown and the cheese is melted.
  • If you don't have a crock-pot, you can make this casserole in a covered baking dish in the oven at 350 degrees Fahrenheit for 1 hour, or until the chicken is cooked through and the tater tots are golden brown.
