No pretense to regional authenticity, but it's the way we like it! You can add more "heat" by increasing the pepper flakes. Goes good with Barb's "recipe #150277". Substitute canned black beans for a change of taste, or use 1 can each of kidney and black beans.

2 tablespoons olive oil
1 medium yellow onion, peeled and chopped
1 medium red onion, peeled and chopped
2 garlic cloves, peeled and minced
2 lbs ground turkey (not ground turkey breast, too dry!)
1 (14 1/2 ounce) can diced tomatoes, undrained
2 (15 1/4 ounce) cans kidney beans, undrained
1 (29 ounce) can tomato sauce
1/2 teaspoon liquid smoke
1/4 teaspoon dried thyme
1/3 cup mild chili powder
1 tablespoon ground cumin
1 large dried New Mexico chile, crumbled
1 teaspoon hot red chili pepper flakes

Steps:

  • Heat 1 tbs. oil in skillet. Saute onions and garlic until soft, and slightly browned. Put into crock pot.
  • Heat remaining oil and brown ground turkey (I use ground dark meat, not as dry as breast meat when cooked). Put meat into crock pot.
  • Add remaining ingredients to crock pot and stir together.
  • Cover and cook on high for 4-6 hours.
  • Serve in large bowls, with cornbread on side.
  • Optional toppings at table: Diced red or sweet yellow onion. Shredded cheddar or pepper jack cheese. Sour cream.

1 lb lean ground turkey
4 garlic cloves, fresh minced
1 sweet onion, fresh chopped
1 green pepper, fresh chopped
2 tablespoons chili powder
28 ounces diced tomatoes, can
15 ounces tomato sauce
10 ounces Rotel tomatoes & chilies
6 ounces light beer (half can)
6 ounces tomato paste
1/4 cup jalapeno, chopped

Steps:

  • Combine turkey and garlic in frying pan and brown, drain grease well, and scrape into crock-pot.
  • Combine onion and green pepper in frying pan and saute until onion is just translucent and scrape into crock pot.
  • Add all other ingredients and stir until combined.
  • Cover and cook on low 6 hours (preferred) or high 3 hours.

This is a combination (and adaptation) of 2 kinds of chilis from Easy Home Cooking's All New Slow Cooker cookbook. It's not a very liquidy chili and it sticks to your ribs. The ground turkey helps make it a little more healthy too. This recipe is very forgiving, so you may adjust the heating time to high (for a shorter period) or a combination of high and low.

1 1/4 lbs ground turkey
1 medium onion, chopped
1 small green pepper, chopped
2 garlic cloves, minced
1 (15 ounce) can black beans, rinsed and drained (or any other favorite bean)
2 lbs fresh tomatoes, diced or 2 (16 ounce) cans diced tomatoes, undrained
1 cup frozen corn
1 tablespoon chili powder (or to taste)
1 1/2 teaspoons ground cumin
1/2-3/4 cup salsa
salt and pepper

Steps:

  • In a large skillet, brown together the ground turkey, onion, green pepper and garlic until ground turkey is browned and vegetables are tender; drain fat.
  • Place ground turkey mixture and remaining ingredients in a crock pot. Cover and cook on low 5-6 hours.
  • Serve with a dollop of sour cream and shredded cheese. Serve with bread and salad for a complete meal.

1 (15 ounce) can black beans, rinsed and drained
1 (14 1/2 ounce) can Mexican-style stewed tomatoes, undrained
1 (14 1/2 ounce) can no-salt-added diced tomatoes, undrained
1 cup frozen corn
1/2 cup onion, chopped
2 garlic cloves, minced
1 teaspoon Mexican seasoning
1/2 cup elbow macaroni, uncooked
1/3 cup reduced-fat sour cream

Steps:

  • Spray large skillet with nonstick cooking spray. Add turkey; cook until browned.
  • Combine cooked turkey, beans, tomatoes, corn, onion, garlic and seasoning in slow cooker.
  • Cover and cook on low 4 to 5 hours.
  • Stir in macaroni.

1 (1 1/4 lb) package sweet Italian turkey sausage links
4 -5 round white potatoes (chopped)
5 celery ribs (chopped)
1 jalapeno (chopped)
2 garlic cloves (chopped)
1 (4 ounce) can of chopped green chilies
2 cups chicken broth
1 (12 ounce) bottle beer (micro brew ( I used New Belgium Two Below)
2 carrots (chopped)
1 (14 ounce) can corn
2 (14 ounce) cans great northern beans
1 tablespoon cumin
2 tablespoons chili powder
1 teaspoon crushed red pepper flakes
salt (to taste)
pepper (to taste)
4 tablespoons flour

Steps:

  • Peel outer casing off of the sausages.
  • Cook sausage, celery, jalapeƱo, chilies, and garlic.
  • Place meat mixture into a large crock pot.
  • Add all other ingredients except flour.
  • Cook on high in crock pot for four hours.
  • Add sifted flour. Cook on low for another hour.
  • Serve with favorite garnish.
