I can't take credit for this recipe. It came from one of my Taste of Home magazine years ago. I can say that it is truly the easiest and best meatloaf EVER! The texture is perfect for sandwiches the next day, and the sauce adds a slight sweetness you don't get from the typical plain ketchup on the top. My picky daughter loves it, which says a LOT She hates finding chunks of onions or peppers in meatloaf and this recipe solves that beautifully. Oh, and it doubles wonderfully if you have a larger crockpot. Use tin foil strips to aid in removal. ENJOY!!

meatloaf mix
2 eggs
3/4 cup milk
2/3 cup seasoned bread crumbs
2 teaspoons dried onion flakes
1 teaspoon salt
1/2 teaspoon rubbed sage
1 1/2 lbs ground beef
topping mix
1/4 cup ketchup
2 tablespoons brown sugar
1 teaspoon ground mustard
1/2 teaspoon Worcestershire sauce

Steps:

  • In a large bowl, combine the first six ingredients. Crumble beef over mixture and mix well (mixture will be moist.) Shape into a round loaf; place in a 2-3qt. slow cooker. Cover and cook on LOW for 5-6 hours or until a meat thermometer reads 160°.
  • In a small bowl, whisk the ketchup, brown sugar, mustard and Worcestershire sauce. Spoon over the meat loaf. Cook 15 minutes longer or until heated through. Let stand for 10-15 minutes before cutting. Yield: 6 servings.

1 1/2 lb ground beef
2 eggs, beaten
3/4 c milk
2/3 c bread crumbs, fine dry
1 small onion, finely chopped
1 tsp salt
1/2 tsp ground sage
SAUCE
1/4 c ketchup
1 tsp dry mustard
2 Tbsp brown sugar
1/4 tsp ground nutmeg

Steps:

  • 1. Combine eggs with milk, bread crumbs, onion, salt, sage, and meat. Mix well.
  • 2. Shape into 9X5 inch recatngle or oval, or about 6 inch round. Carefully place in slow cooking crock pot.
  • 3. Cook on low for 5 to 6 hours.
  • 4. Combine sauce ingredients in small bowl; pour over meat.
  • 5. Cover and cook on high 15 minutes longer.
  • 6. Slice and serve while hot or can use cold slices for sandwiches.

  • Fold a 24" length of foil in half lengthwise and fit into the bottom and sides of a 5-6 quart slow cooker. Put the turkey, bread crumbs, cheese, onion, egg, oregano, salt and pepper in a medium bowl; mix well with hands and shape into a loaf. Place loaf on foil in slow cooker. Cover the slow cooker and cook until the meatloaf juices run clear. It needs 3-4 hours on high or 6-8 hours on low. Combine ketchup, sugar, Worcestershire sauce and mustard in small bowl. Spoon mixture over meatloaf in the slow cooker, spreading it smooth and cover the slow cooker and cook until the glaze is heated through, about 30 minutes longer.
