PANKO-CRUSTED SALMON
Steps:
- Preheat the oven to 425 degrees.
- In a small bowl, mix together the panko, parsley, lemon zest, 1/2 teaspoon salt, and 1/2 teaspoon pepper. Drizzle with the olive oil and stir until the crumbs are evenly coated. Set aside.
- Place the salmon fillets, skin side down, on a board. Generously brush the top of the fillets with mustard and then sprinkle generously with salt and pepper. Press the panko mixture thickly on top of the mustard on each salmon fillet. The mustard will help the panko adhere.
- Heat the vegetable oil over medium-high heat in a 12-inch cast-iron skillet or large heavy, ovenproof pan. When the oil is very hot, add the salmon fillets, skin side down, and sear for 3 to 4 minutes, without turning, to brown the skin.
- Transfer the pan to the hot oven for 5 to 7 minutes until the salmon is almost cooked and the panko is browned. Remove from the oven, cover with aluminum foil, and allow to rest for 5 to 10 minutes. Serve the salmon hot or at room temperature with lemon wedges.

DELICIOUS FETA-CRUSTED SALMON
I first created this dish when my family suggested I try something other than the same tired (yet still yummy) Asian salmon dish. I whipped this up out of ingredients I had on hand. They thanked me profusely. Now I have a new dish to use. It's pretty rich in flavor, but not so high in fat (depending on what kind of ingredients you use). Enjoy!

Tips:
- Choose the right salmon fillet: Look for a thick, firm fillet with evenly distributed fat. Avoid fillets with any brown or discolored spots.
- Season the salmon well: Use a combination of salt, pepper, and your favorite herbs and spices to flavor the salmon. You can also add a squeeze of lemon juice or a drizzle of olive oil.
- Cook the salmon at a high temperature: This will help to create a crispy crust and prevent the salmon from drying out. The best way to cook salmon is to sear it in a hot skillet or grill it over medium-high heat.
- Don't overcook the salmon: Salmon is a delicate fish, so it's important to avoid overcooking it. The best way to tell if the salmon is done is to insert a fork into the thickest part of the fillet. If the fork comes out easily, the salmon is done.
- Serve the salmon immediately: Salmon is best served immediately after cooking, while it's still hot and flaky. You can serve it with a variety of sides, such as roasted vegetables, mashed potatoes, or a salad.
Conclusion:
Crumb-topped salmon is a delicious and easy-to-make dish that's perfect for any occasion. With just a few simple ingredients, you can create a flavorful and satisfying meal that the whole family will enjoy. Next time you're looking for a quick and easy weeknight dinner, give crumb-topped salmon a try. You won't be disappointed!
