Steps:
- Using a large knife, shred the cabbage and place in a large bowl with the carrot, apple and spring onions.
- Whisk together the mayonnaise, vinegar and oil. Season then toss with the salad. Serve or see our suggestions, below right.
- To make with roast chicken, snip the stalks from a punnet of mustard cress and stir half into the coleslaw with the wholegrain mustard. Divide between plates then scatter the roast chicken (leftovers or shop bought) on top. Sprinkle with the remaining cress and serve.
- To make with marinated chicken, heat the grill to high. Tear the leaves from a large bunch basil and scatter half of them into the coleslaw. Chop the rest and mix with a pinch ground fenugreek or coriander, zest and juice of the lime, olive oil and salt and pepper to taste. Rub the chicken breasts in the lime mix (leave to marinate for 10 mins if time), then grill for 6 mins on each side until golden and cooked through. Thickly slice and serve on top of the coleslaw.

Tips for Making the Best Crunchy 3 Cabbage Slaw:
- Use a variety of cabbages. This will give your slaw a more complex flavor and texture. Green cabbage is the most common type used in slaw, but you can also add red cabbage, savoy cabbage, or bok choy for a more colorful and flavorful dish.
- Shred the cabbage thinly. This will help the slaw to absorb the dressing and make it more tender.
- Use a sharp knife or mandoline to shred the cabbage. This will give you clean, even shreds that will look better in your slaw.
- Add other vegetables to your slaw. This is a great way to add more nutrients and flavor to your dish. Some good options include carrots, celery, bell peppers, and radishes.
- Use a light and tangy dressing. A mayonnaise-based dressing is the most common type used for slaw, but you can also use a vinaigrette or a yogurt-based dressing for a healthier option.
- Season your slaw to taste. Add salt, pepper, and other seasonings to taste until you reach the desired flavor.
- Chill your slaw before serving. This will help the flavors to meld and make the slaw more refreshing.
