This is a great Italian style way to prepare beef or venison cube steaks. Double the ingredients for a crowd!

3 tablespoons all-purpose flour
½ teaspoon salt
¼ teaspoon ground black pepper
2 eggs
2 tablespoons water
⅓ cup crushed saltine crackers
⅓ cup grated Parmesan cheese
½ teaspoon dried basil
3 tablespoons vegetable oil
4 (4 ounce) beef cube steaks
1 ¼ cups canned tomato sauce
2 ¼ teaspoons white sugar
½ teaspoon dried oregano, divided
¼ teaspoon garlic powder
4 slices mozzarella cheese
⅓ cup grated Parmesan cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). In a shallow dish, stir together the flour, salt and pepper. In a separate bowl, whisk together the eggs and water with a fork. In a third bowl, or shallow dish, mix together the cracker crumbs, 1/3 cup of Parmesan cheese and basil.
  • Heat the oil in a large skillet over medium heat. Dredge the cube steaks in the seasoned flour, dip into the egg mixture, and coat with the cracker crumb mixture. Place them in the skillet, and fry just until browned on each side. Arrange steaks in a single layer in a greased casserole dish.
  • Bake for 25 minutes in the preheated oven. Meanwhile, in a medium bowl, stir together the tomato sauce, sugar, 1/4 teaspoon of oregano, and garlic powder. Spoon over steaks when the 25 minutes are up. Top each steak with mozzarella cheese and remaining Parmesan cheese; sprinkle remaining oregano over the top. Bake for 5 more minutes, or until the cheese is melted, and the sauce is hot.

1/2 cup milk
3/4 cup crushed saltines (about 25 crackers)
2/3 cup all-purpose flour
3/4 teaspoon salt
1/4 teaspoon baking powder
1/4 teaspoon cayenne pepper

4 beef cube steaks (4 ounces each)
3 tablespoons canola oil
GRAVY:
2 tablespoons all-purpose flour
1-1/3 cups milk
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a shallow bowl, whisk egg and milk. In another shallow bowl, combine the cracker crumbs, flour, salt, baking powder, cayenne and pepper. Dip steaks in egg mixture, then in crumb mixture., In a large skillet, cook steaks in oil over medium heat for 3-4 minutes on each side or until no longer pink. Remove and keep warm., For gravy, stir flour into the pan until blended. Gradually add milk, stirring to loosen browned bits from pan. Bring to a boil; cook and stir 2 minutes or until thickened. 2 lbs cube steaks, cut into serving size pieces
1/4 cup Worcestershire sauce
1/4 cup flour
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon garlic powder
3 tablespoons vegetable oil
1/2 cup minced onion
2 cups water

Steps:

  • Cover the steak with Worcestershire sauce; let sit for 5 minutes.

This is just something i threw together and it turned out to be really good!! You can pretty much change up the spices to your liking, the steaks turned out super tender and the taters well..lol i've never met a bad one!!!! I made this for 2 so im posting the recipe to reflect that but you can make as much as you need by using a larger pan.

2 beef cube steaks
1 small onion, Sliced
2 medium potatoes, cut into chunks
1/2 teaspoon seasoning salt (or to taste )
1/2 teaspoon garlic powder (or to taste )
fresh ground black pepper, to taste
3/4 cup beef broth (have some extra just in case )
1 -2 tablespoon Worcestershire sauce

Steps:

  • Spray a baking dish with nonstick spray.
  • Season the cube steaks on both sides with seasoning salt, garlic and black pepper.
  • Place some rings of onion on top of steaks, then add chunks of potatoes, then a few more onions.Sprinkle potatoes and onions with a little more of the seasoning.
  • Pour beef broth over all and also add the worcheshire sauce to taste. Cover tightly with foil and bake at 325 for 2 hours ( no peeking till at least 1.5 hours then check if more liquid is needed).
