Best Ever Green Bean Casserole image

Go fresh with Alton Brown's Best-Ever Green Bean Casserole recipe from Good Eats on Food Network. Onions tossed in panko breadcrumbs provide a crunchy topping.

Provided by Alton Brown

Categories     side-dish

Time 1h10m

Yield 4 to 6 servings

Number Of Ingredients 15

2 medium onions, thinly sliced
1/4 cup all-purpose flour
2 tablespoons panko bread crumbs
1 teaspoon kosher salt
Nonstick cooking spray
2 tablespoons plus 1 teaspoon kosher salt, divided
1 pound fresh green beans, rinsed, trimmed and halved
2 tablespoons unsalted butter
12 ounces mushrooms, trimmed and cut into 1/2-inch pieces
1/2 teaspoon freshly ground black pepper
2 cloves garlic, minced
1/4 teaspoon freshly ground nutmeg
2 tablespoons all-purpose flour
1 cup chicken broth
1 cup half-and-half

Steps:

  • Preheat the oven to 475 degrees F.
  • Combine the onions, flour, panko and salt in a large mixing bowl and toss to combine. Coat a sheet pan with nonstick cooking spray and evenly spread the onions on the pan. Place the pan on the middle rack of the oven and bake until golden brown, approximately 30 minutes. Toss the onions 2 to 3 times during cooking. Once done, remove from the oven and set aside until ready to use. Turn the oven down to 400 degrees F.
  • While the onions are cooking, prepare the beans. Bring a gallon of water and 2 tablespoons of salt to a boil in an 8-quart saucepan. Add the beans and blanch for 5 minutes. Drain in a colander and immediately plunge the beans into a large bowl of ice water to stop the cooking. Drain and set aside.
  • Melt the butter in a 12-inch cast iron skillet set over medium-high heat. Add the mushrooms, 1 teaspoon salt and pepper and cook, stirring occasionally, until the mushrooms begin to give up some of their liquid, approximately 4 to 5 minutes. Add the garlic and nutmeg and continue to cook for another 1 to 2 minutes. Sprinkle the flour over the mixture and stir to combine. Cook for 1 minute. Add the broth and simmer for 1 minute. Decrease the heat to medium-low and add the half-and-half. Cook until the mixture thickens, stirring occasionally, approximately 6 to 8 minutes.
  • Remove from the heat and stir in 1/4 of the onions and all of the green beans. Top with the remaining onions. Place into the oven and bake until bubbly, approximately 15 minutes. Remove and serve immediately.

Green Bean Casserole With Crispy Shallots image

Provided by Ellie Krieger

Categories     side-dish

Time 1h25m

Yield 8 servings

Number Of Ingredients 13

1/4 cup olive oil
6 medium shallots, sliced into rings (about 1 cup)
1 1/2 pounds thin fresh string beans or haricots verts, trimmed
1 pound button mushrooms, sliced
6 large cloves garlic, minced
1 tablespoon chopped fresh thyme
3 cups low-fat (1 percent) milk
3 tablespoons all-purpose flour
1/3 cup plus 2 tablespoons freshly grated parmesan cheese
1/2 cup finely chopped fresh parsley
1/4 teaspoon ground nutmeg
Salt and freshly ground pepper
Olive oil cooking spray

Steps:

  • Preheat the oven to 375 degrees F. Heat the olive oil in a small skillet over medium-high heat until very hot but not smoking. Add 1/4 cup shallots and cook, stirring, until golden brown and crisp, about 2 minutes. Transfer with a slotted spoon to paper towels to drain. Repeat with the remaining shallots, cooking 1/4 cup at a time. Reserve the oil in the skillet.
  • Place the green beans in a steamer basket fitted over a pot of boiling water. Cover and steam until bright green and still crisp, about 3 minutes. Heat 1 tablespoon of the reserved shallot oil in a large, deep nonstick skillet over medium-high heat. Add the mushrooms and cook, stirring occasionally, until the mushroom liquid is evaporated and they begin to brown, about 12 minutes. Add the garlic and thyme and cook, stirring, 1 minute. Transfer the mushroom mixture to a bowl. Whisk together the milk and flour until the flour is dissolved. Add the mixture to the skillet and, whisking constantly, bring to a simmer. Reduce the heat to medium low, whisking occasionally, until thickened, 10 to 15 minutes. Remove the pan from the heat and stir in the green beans, mushroom mixture, 1/3 cup parmesan cheese, the parsley, nutmeg, 3/4 teaspoon salt and 1/2 teaspoon pepper.
  • Coat a 2-quart baking dish with cooking spray. Spoon the green bean mixture into the prepared dish and sprinkle the top with the crispy shallots and the remaining 2 tablespoons cheese. Bake until golden on top and bubbling, about 20 minutes.

CRISPY TOP GREEN BEAN CASSEROLE

Crispy Top Green Bean Casserole image

This year, my daughter Julie and I made a team effort out of making the green bean casserole for Christmas dinner. I had a recipe I'd wanted to use portions of, and together in the kitchen we made created a new twist on the old standard that was really tasty!

Provided by Juliesmom

Categories     Onions

Time 50m

Yield 6-8 serving(s)

Number Of Ingredients 18

1 1/2 tablespoons butter
3 tablespoons flour
3/4 cup evaporated milk
3/4 cup milk
1/2 teaspoon concentrated chicken soup base
1/2 teaspoon celery salt
2 pinches nutmeg
1/8 teaspoon white pepper
1 tablespoon olive oil
1 teaspoon butter
1 cup chopped onion
2 cloves garlic, minced
1 (3 ounce) can chopped mild green chilies
1 1/2 cups sliced fresh mushrooms
1 1/4 lbs fresh green beans, steamed until crisp-tender
1 1/4 cups fresh breadcrumbs
3 tablespoons butter, melted
1/4 teaspoon ground sage or 1/4 teaspoon rubbed sage

Steps:

  • Preheat the oven to 350 degrees F.
  • (If you haven’t steamed your green beans, begin with those – they’ll be done, about 20 minutes, by the time you need to mix them into the casserole.).
  • Begin the sauce: in a saucepan melt the butter over low heat, then whisk in the flour, stirring continually, and cook for 2 minutes (the mixture will be quite thick).
  • Gradually add the milk while whisking, and bring to a simmer; cook, whisking continually, for 3 or so minutes and it thickens.
  • Add the concentrated chicken base, celery salt, nutmeg, and white pepper; whisk well to make sure chicken base is dissolved, remove from heat and set aside.
  • Begin the filling: in a large nonstick skillet, melt together the olive oil and butter over medium heat; add the onion and garlic, and sauté until onion begins to soften, about 5 to 7 minutes.
  • Add the chopped mild green chiles, stir well to combine, and let the mixture brown for about 3 minutes without stirring.
  • Add the sliced mushroom, cover, and sauté, stirring occasionally, until mushrooms are tender, about 5 minutes; remove about half of the mushroom mixture from the pan and set it aside.
  • In a 1 1/2 quart lightly-sprayed casserole dish, combine the half of the mushroom mixture from the pan, the cooked green beans, and the white sauce; taste test and adjust salt and pepper, if necessary.
  • Combine the remaining mushroom mixture with the bread crumbs; combine the melted butter and the sage, then stir it into the crumb mixture.
  • Spread the crumb mixture over the beans.
  • Bake uncovered for 30 minutes.

Tips:

  • Prep Work: Before starting, wash and trim the green beans, and slice the almonds. Additionally, preheat the oven to 350°F (175°C) and grease a 9x13 inch baking dish.
  • Choosing Green Beans: Select fresh, tender green beans that snap easily when bent. Avoid limp or discolored beans.
  • Blanching Green Beans: Blanching helps preserve the color and crispness of the green beans. Bring a large pot of salted water to a boil, add the green beans, and cook for 3-4 minutes. Immediately transfer the beans to an ice bath to stop the cooking process.
  • Crispy Onion Topping: To achieve a golden-brown and crispy onion topping, use thinly sliced yellow or white onions. Sauté the onions in butter until they become translucent and slightly caramelized.
  • Creamy Sauce: For a smooth and creamy sauce, use a combination of cream of mushroom soup, sour cream, and milk. Season the sauce with salt, pepper, and garlic powder to taste.
  • Assembly: Layer the blanched green beans, creamy sauce, crispy onion topping, and almonds in a greased baking dish. Ensure the ingredients are evenly distributed.
  • Baking Time: Bake the casserole in a preheated oven at 350°F (175°C) for 25-30 minutes or until the casserole is bubbly and the topping is golden brown.
