This is a wonderful sandwich!! I was making myself a grilled cheese sandwich about a week ago, and decided to get a little creative with it. It came out spectacular. This is a nice change from your average grilled cheese :-) AND DONT BE AFRAID TO TRY IT! Even if you dont like spinach, try the sandwich.. its great!!!

1 slice American cheese (or whatever kind you prefer)
2 slices tomatoes
6 spinach leaves, torn in half (more or less, you decide, I like a lot!!)
2 slices white bread (or whatever kind you prefer, if you use large slices you may need to add more ingredients)
1 tablespoon margarine or 1 tablespoon butter
1 dash salt
1 dash garlic powder

Steps:

  • spray frying pan with cooking spray.
  • Turn stove on to medium heat, and add tomatoes to outside edges of pan, and add spinach to center.
  • Sprinkle salt and garlic over the vegetables.
  • Toss spinach frequently, and turn tomatoes over after a minute or so.
  • cook tomato just until it gets a little soft, but do not wait until it gets mushy.
  • Cook spinach until slightly wilted.
  • Take both out when they are done and set aside.
  • Wipe pan out with towel, and heat on medium.
  • Butter one piece of bread as you would for a regular grilled cheese sandwich.
  • Put bread in pan, and place cheese on top and then place spinach and tomato on top of the cheese.
  • Allow to heat.
  • Butter the other piece of bread, and fry sandwich until nicely browned on both sides.
  • Remove and Serve!

1 pound fresh spinach
1/4 pound creamy fresh goat cheese, such as Montrachet
3 tablespoons unsalted butter
3 tablespoons all-purpose flour
1 cup milk
Salt and freshly ground black pepper
Freshly grated nutmeg
3 egg yolks at room temperature
4 egg whites at room temperature
Pinch of cream of tartar

Steps:

  • Butter a five-cup souffle dish, making sure to butter the rim well. Place oven rack in lower third of oven and preheat oven to 425 degrees.
  • Remove spinach stems and wash leaves. In a large saucepan of boiling salted water cook spinach, uncovered, about three minutes or until very tender. Drain. Rinse under cold water and drain again. Squeeze by handfuls until dry. Puree in a food processor until finely chopped.
  • Crumble cheese or cut into pieces and set aside.
  • In a small, heavy saucepan, melt butter over low heat. Add flour and cook, whisking constantly, about two minutes, until foaming but not browned. Remove from heat. Gradually whisk in the milk, bring to a boil over medium-high heat, whisking, reduce heat to low, continue to cook, still whisking, about two minutes. Whisk in spinach puree and goat cheese, bring to a simmer. Season lightly with salt, pepper and nutmeg.
  • Remove from heat and whisk in the egg yolks, one at a time. Heat gently until slightly thickened, but do not allow to boil. Re-season if necessary.
  • Beat egg whites with cream of tartar until stiff but still supple. Quickly fold one-quarter of the whites into the warm spinach mixture. Spoon the mixture into the remaining whites and fold in lightly but quickly.
  • Transfer mixture to prepared souffle dish and smooth the top. Bake 20 minutes till puffed and browned. Souffle should shake slightly in the center when the dish is moved. Do not overbake. Serve at once.

1/4 cup pine nuts or coarsely chopped walnuts or pecans
1 4-ounce log goat cheese (there are flavored goat cheeses available, some of which can be good with the salsa, but think about the flavor combination before making your purchase)

1 cup Roasted Jalapeño-Tomato Salsa
