- To a kettle of boiling salted water add the rice, stirring, return the water to a boil, stirring, and boil the rice, stirring occasionally, for 10 to 12 minutes, or until it is tender. The rice may be cooked 3 days in advance and kept covered and chilled.

BLACK RICE SALAD WITH CUCUMBER, MANGO, AND MINT
Steps:
- Put all the veggies and grain in a big bowl and toss. Mix the dressing ingredients in a separate container and pour over the salad. Toss. Season with salt and pepper to taste. Serve chilled. This salad is best 1-3 hours after it has been made. It will remain appealing for about 3 days in the refrigerator. Can be prepared a day ahead of time. Keep the dressing separate, as lime juice loses its tang quickly, and the salt in the fish sauce will cause the veggies to lose their crunch.

CUCUMBER AND TOMATO SALAD WITH CILANTRO AND MINT
Greater Los Angeles is a collection of not just smaller cities but also exotic populations. Among those cities is Glendale (not so small: it would be the second-most-populous city in New England), a center of the Armenian diaspora and home to one of the world's largest Armenian populations outside Armenia. Fleeing religious violence in the late 19th century, genocide in the early 20th or the Soviet Union after that, Armenian Californians became integral in the development of the fig, raisin and bulgur businesses. They also opened restaurants. This salad comes from one of them, Adana. The chef and owner, Edward Khechemyan, gave me the recipe in 2013.

Tips:
- For the best flavor, use fresh, crisp cucumbers. English or Persian cucumbers are ideal, as they have fewer seeds and a milder flavor.
- If you don't have fresh mint, you can use dried mint. However, fresh mint will give the salad a more pronounced flavor.
- To make the salad more refreshing, chill the cucumbers and mint before assembling.
- You can add other ingredients to the salad, such as chopped red onion, feta cheese, or tomatoes.
- Serve the salad immediately or store it in the refrigerator for up to 24 hours.
Conclusion:
Cucumber and mint salad is a refreshing and light side dish that is perfect for summer. It is easy to make and can be tailored to your own preferences. With its cool, crisp cucumbers and fragrant mint, this salad is a surefire crowd-pleaser.
