Time 4h

Number Of Ingredients 16

2/3 c olive oil
2 Tbsp fresh lemon juice
2 Tbsp chopped fresh garlic
2 tsp dried oregano
2 tsp salt
1/2 tsp coarse ground pepper
1/2 tsp crushed red pepper
3 lb frozen chicken wing drummettes thawed (48 oz)
CUCUMBER DIPPING SAUCE
1 c yogurt, plain
1 c sour cream
1 small cucumber
1 Tbsp lemon juice
1 Tbsp dill weed, dried
1/2 tsp salt
1/4 tsp fresh ground black pepper, course

Steps:

  • 1. Combine all marinade ingredients, then pour over chicken in large zip lock bag. Coat chicken well with mixture. Refrigerate, turning occasionally for 3 hours or overnight.
  • 2. Heat oven to 400 degrees. Remove chicken from marinade and discard marinade. Arrange chicken on aluminum foil-lined 15x10x1 pan. Bake for 45 - 50 minutes, turning once.
  • 3. Cucumber Sauce needs to be combined and refrigerated for at least 2 hours but is best if made a day ahead. Peel, seed, and shred cucumber then combine all ingredients in small bowl.

Tips:

  • Choose the right cucumbers: For the best flavor and texture, use fresh, firm cucumbers that are free of blemishes and bruises. English or Persian cucumbers are ideal for this sauce.
  • Chill the cucumbers before using: This will help to keep the sauce cool and refreshing.
  • Use fresh herbs: Fresh herbs, such as dill, cilantro, and mint, add a lot of flavor to this sauce. If you don't have fresh herbs on hand, you can use dried herbs, but they won't be as flavorful.
  • Adjust the seasonings to your taste: This sauce is very versatile, so you can adjust the seasonings to your liking. If you like a more tangy sauce, add more vinegar or lemon juice. If you like a more spicy sauce, add more chili flakes or chopped jalapeño pepper.
  • Serve the sauce immediately: This sauce is best served immediately after it is made, as it will lose its flavor if it sits for too long.

Conclusion:

This cucumber dipping sauce is a refreshing and flavorful condiment that is perfect for summer gatherings. It is easy to make and can be customized to your liking. Serve it with your favorite vegetables, crackers, or chips.
