SPICY CUCUMBER SOUP WITH YOGURT BY SY

Spicy Cucumber Soup with Yogurt by Sy image

This is a wonderful Cold Yogurt Soup for a hot summers day! Try chopping up the cucumbers very fine or leave them on the chunky side! It you chop up the cucumbers real fine and add more water, you then have a good "Yogurt Drink" instead of a soup! Also, other variations for this Cold Yogurt Soup are using chicken stock, buttermilk, sour cream, touch of tabasco... Enjoy!

Time 30m

Yield 6 serving(s)

Number Of Ingredients 7

3 -4 cups yogurt, rich creamy type (not the non-fat yogurt variety)
1/2 cup sour cream
1 cup water
2 large cucumbers, peeled & seeds scooped out and cup up into small pieces

1 clove garlic, chopped finely
1 -2 tablespoon lemon juice (If using a tangy type yogurt, eliminate or use 1 tablespoon)

  • Put cucumbers in a bowl or colander and sprinkle with salt and toss; let stand for about 15-30 minutes
  • Put yogurt, sour cream and about 1 cup water into a bowl and blend till smooth (Like the consistency of buttermilk)

  • Serve cold and topped with any combo of fresh dill, mint leaves, chivesà Mrs. Dash spices and/or salt to taste.

Yield Makes 10 servings

Number Of Ingredients 14

3 large seedless cucumbers (usually plastic-wrapped; 3 pounds total), quartered lengthwise and cut crosswise into 1/4-inch-thick slices
1 small russet (baking) potato (1/4 pound)
1 medium onion, chopped
1 medium carrot, chopped (1/2 cup)
1/2 celery rib, chopped
1 large garlic clove, chopped
1 Turkish or 1/2 California bay leaf
1 (3-inch) fresh thyme sprig
2 tablespoons unsalted butter
4 cups water
1/4 teaspoon black pepper
1 1/2 teaspoons salt
Scallop and sole mousselines
Garnish: thinly sliced smoked sablefish (black cod); fresh chives or fresh dill sprigs

Steps:

  • Cook cucumbers in a 4- to 5-quart pot of boiling salted water , uncovered, just until water returns to a boil, about 1 minute, then immediately drain in a colander and transfer to a bowl of ice and cold water to stop cooking. Drain cucumbers well, then purée in 2 batches in a blender until as smooth as possible, about 1 minute, transferring to a bowl.
  • Peel potato and cut into 1/2-inch cubes. Cook onion, carrot, celery, garlic, bay leaf, and thyme in butter in a 2-quart heavy saucepan over moderate heat, stirring occasionally, until vegetables are softened, about 3 minutes. Add potato, 4 cups water, pepper, and 1/2 teaspoon salt and simmer, partially covered, until potato is very tender, about 15 minutes. Discard bay leaf and thyme.
  • Purée mixture in batches in blender until very smooth, about 1 minute (use caution when blending hot liquids), transferring to a large bowl. Chill, uncovered, until completely cool, about 30 minutes.
  • Stir cucumber purée into potato purée and force soup through a fine-mesh sieve into a large bowl, pressing hard on and then discarding solids.
  • Stir remaining teaspoon salt into soup, then reheat in a bowl in a microwave or in a saucepan on stovetop over low heat (microwaving is best because it preserves the soup's bright green color). Put 1 mousseline in each of 10 shallow soup bowls and pour warm soup around each.

Tips for Making Cucumber Soup with Soy and Scallions:

  • Choose the right cucumbers: Use fresh, unwaxed cucumbers for the best flavor. English or Persian cucumbers are ideal as they have fewer seeds and a thinner skin.
  • Chill the soup before serving: This soup is best served cold, so make sure to chill it for at least 2 hours before serving.
  • Garnish with fresh herbs: Fresh herbs like cilantro, mint, or basil add a nice pop of flavor and color to the soup.
  • Adjust the spiciness: If you like spicy food, you can add more Sriracha or chili sauce to taste.
  • Make it vegan: To make this soup vegan, simply omit the chicken broth and use vegetable broth instead.

Conclusion:

Cucumber soup with soy and scallions is a refreshing and flavorful soup that is perfect for a light lunch or dinner. It is easy to make and can be tailored to your own taste preferences. So next time you are looking for a healthy and delicious soup, give this recipe a try!
