Steps:

  • Preheat the oven to 350°F (180°C). Line 16 standard-size muffin cups with paper liners.
  • Using a 1-tablespoon scoop with a spring release, scoop 1 tablespoon of brownie batter into the bottom of a prepared muffin cup. Stack 2 halves of a Godiva® Signature Salted Caramel Milk Chocolate Mini Bar horizontally in the center of the cup, then cover with 2 more tablespoons of brownie batter. Repeat with the remaining 15 cups, or until the brownie batter is used up.
  • Bake the brownie cupcakes for 22-25 minutes, or until set.
  • Remove the brownie cupcakes from the oven and turn the oven to broil.

For The Sauce
1 cup Jack's Old South Vinegar Sauce or Basic Vinegar Sauce (page 22)
2 cups Jack's Old South Hickory Sauce or Basic Hickory Sauce (page 22)
1 cup ketchup
1 cup honey
1 cup maple syrup
1 1/4 cups seedless blackberry preserves
8 tablespoons (1 stick) unsalted butter, at room temperature
What You'll Need
Poultry shears
1 silicone cupcake mold, with holes punched through each cup (or an aluminum cupcake pan, also with holes punched through each cup)
1 13 x 9-inch aluminum baking pan
1 aluminum baking sheet

Steps:

  • Heat a smoker to 300˚F.
  • Using poultry shears, remove the knuckle on each end of each chicken thigh bone. Then trim the excess fat off the skin and meat of each thigh until the pieces are 3 to 4 inches wide, leaving about 1/4 inch of excess skin at the edges of the meat. Apply the chicken rub evenly to both sides of the thighs.
  • In the cupcake mold, place each thigh, skin side down, in an individual cup. Sit the mold in the baking pan, and pour the chicken broth into the pan, being careful not to pour it directly on top of the chicken. Place the pan in the smoker and cook, uncovered, for 1 1/2 hours.
  • Remove the baking pan from the smoker. Gently flip the thighs onto the baking sheet. Season the tops of the thighs with salt and pepper. Return the thighs to the mold cups, skin side up, and put the baking pan back in the smoker. Cook for 45 minutes.
  • Meanwhile, make the sauce: Put all the sauce ingredients into a blender and blend until thoroughly combined. In a medium pan over medium heat, warm the sauce until it is hot but not boiling. Set aside.
  • Remove the pan from the smoker, and unmold the chicken thighs onto the baking sheet, skin side up. Brush the thighs lightly with the warm sauce. Place the baking sheet in the smoker and cook for 30 minutes to allow the sauce to caramelize into the chicken skin.
  • Remove the baking sheet from the smoker, and serve the cupcake chicken immediately.

Steps:

  • Turn the stand mixer on the lowest speed. Add the dry ingredients and milk, alternating between the two and scraping down the sides after each addition. Mix on medium for 1 minute. Using a rubber spatula, gently fold the whipped egg whites into the chocolate batter in three parts.
  • Scoop one scoop of the chocolate cupcake batter into each cupcake liner. Top with one scoop of the peanut butter filling. The liners will be about two-thirds full. Bake until the cupcakes are nicely domed and the chocolate bounces back from gentle pressure, about 22 minutes; the peanut butter filling will not be firm. Remove from the pans and cool.
  • For the frosting: In the bowl of a stand mixer with a whisk attachment, whip the cream, confectioners' sugar and vanilla on medium speed until stiff peaks form. Be careful not to over-whip the cream.

1/2 teaspoon baking soda
1/4 teaspoon salt

1 cup whole milk, at room temperature
1/2 cup cocoa powder, sifted
1/2 cup heavy cream
1 cup semi-sweet chocolate chips

Steps:

  • Cupcakes:.
  • Preheat the oven to 350 degrees. Line a standard cupcake pan with 12 baking cups and a second pan with 6 cups.
  • Sift together the flour, baking soda and salt on a sheet of wax paper.
  • Beat the butter on medium speed until fluffy. Stop to add the sugar; beat on medium speed until well incorporated.
  • Add the eggs one at a time, mixing slowly after each addition.
  • Combine the vanilla extract and milk in a large liquid measuring cup.
  • Reduce the speed to low. Add 1/3 of the flour mixture to the butter mixture, then gradually add 1/3 of the milk mixture, beating until well incorporated. Add another 1/3 of the flour mixture, followed by 1/3 of the milk mixture. Stop to scraped down the bowl as needed.   • Use a standard size ice cream scoop to fill each cupcake paper with batter, so that the wells are 2/3's full. Bake for 18-20 minutes (start checking at 15 minutes) or until a toothpick inserted into the center of a cupcake comes out clean. Transfer the pans to a wire rack to cool completely.
  • Ganache:.
  • Lay a large piece of wax paper on the work surface.
  • Combine the heavy cream and chocolate in a medium heatproof bowl. Fill a medium saucepan with an inch or two of water and place over medium-low heat. Place the bowl over the saucepan and let the mixture melt, stirring until it is shiny and smooth.
  • Remove the bowl of chocolate ganache from the saucepan; let it cool slightly, for 2-3 minutes. Working with one cupcake at a time, carefully dip each cupcake top in the warm ganache, twisting your wrist as needed to make sure the cupcake top gets completely coated. To prevent drips, quickly turn the cupcake right side up and place on the wax paper. Allow the ganache to set for 5 minutes before serving.

1 1/2 cups (12 ounces) unsalted butter, cubed and chilled
4 ounces cream cheese, cubed and chilled
3 cups powdered sugar
1 cup caramel sauce

Steps:

  • Preheat the oven to 350 degrees F (325 degrees F in a convection oven). Line cupcake pans with cupcake liners (24 regular size or 48 mini size).
  • Using a standing mixer fitted with a paddle attachment, mix the sour cream, baking soda, salt and eggs until combined. Scrape out the insides of the vanilla bean. Add the vanilla and granulated sugar to the egg mixture. Mix until combined.
  • In a small bowl, mix the melted butter with 1 cup water. With mixer set to a low speed, alternate adding the water and butter, with the flour. Scrape down the sides of the bowl and continue mixing until well combined.
  • Fill the cupcake liners two-thirds full with the batter. Bake until golden brown and baked through, 22 minutes for regular size and 16 minutes for mini size. Cool the cupcakes completely. Frost with the Caramel Buttercream Frosting. Garnish if desired.
  • Using a standing mixer fitted with a paddle attachment, add the butter and beat until smooth, 2 to 3 minutes. Add the cream cheese and beat until fully incorporated and smooth. Reduce the speed and add the powdered sugar a little at a time. Mix until fully incorporated. Add the caramel sauce to the buttercream mixture.

Notes about the recipe: I did this for my wedding cake so that cutting would be easy (there's none to do!), sending people home with leftovers would be easy, and I could squirrel away a few for us to have back at the hotel after the wedding as well as freeze for our 1 year anniversary. Steps:

  • Make the White Buttercream: Put the sugar in a saucepan fitted with a candy thermometer and pour the water down the walls of the pan to moisten the sugar without letting sugar crystals wash up on the walls of the pan. Run your finger through the center making an X to allow the water to seep into the sugar if it hasn't already. Bring the sugar to a boil over high heat and continue cooking to the "softball" stage (234 degrees F.).
  • Meanwhile, in a standing mixer fitted with the whip attachment, whip the egg whites to soft peaks and hold them on low speed until the sugar is ready. When the sugar syrup is has reached the softball stage, turn the mixer up to high and slowly pour the syrup down the side of the mixer. Let it continue to whip to cool down. When it's feeling somewhat cooled but still a little warm, start adding the butter a few pieces at a time until you have a smooth, whipped butter cream. Add the almond extract. Use right away or cover and chill. Re-warm or let sit out to warm up to room temperature to use.
  • Make the Cupcakes: Preheat the oven to 350 degrees F.
  • In a mixer with a whip attachment, cream the butter until light and fluffy. Add the sugar and continue to cream. Gradually add the vanilla and eggs and mix in well. Sift together the dry ingredients; then mix into the butter mixture alternating with the milk. Pour batter into cupcake paper-lined muffin tins filling them 3/4 full. Bake until puffed and firm in the center and light golden brown on top, about 20 to 25 minutes. Let cool. (Freeze at this point, if necessary.)
  • Decorate and Assemble the Cupcakes: Using a small spatula, frost the tops of the cooled cup cakes with the buttercream. Decorate each with a few pearls of fondant.
  • Tie the cake pull charms to the ends of the ribbons.
  • Arrange some of the cupcakes on the largest cake stand, leaving the center empty for the base of the next cake stand. Tuck some of the cake pull charms under some of the cupcakes, dangling the ribbons off the edge of the cake stand. Place the next cake stand in the center and repeat. Make as many tiers as you need. 3 oranges
1 box chocolate cake mix
3 eggs
½ cup oil
1 cup orange juice
4 oz cream cheese, room temperature
1 teaspoon vanilla extract
¼ teaspoon orange zest, plus more for garnish
8 tablespoons butter, room temperature
1 ¼ cups powdered sugar

Steps:

  • Cut orange in half. With a paring knife, carefully cut along the entire edge. With a spoon, scoop out the "meat" and set aside in a bowl. Repeat for all oranges. This will yield 6 empty orange halves.
  • Juice the orange, reserve for the cake mix.
  • Pre heat oven to 350°F (175°C). In a medium bowl, combine cake mix, eggs, oil and freshly squeezed orange juice. Mix until the batter has no lumps.
  • Place the orange cups into a muffin tin and fill with ¼ cup (60 g) of the chocolate batter.
  • Bake 25 minutes.
  • In a medium bowl, blend cream cheese, vanilla extract and orange zest until nice and smooth. Add butter and mix on medium high for a couple of minutes. Add powdered sugar and mix until the frosting is uniformly smooth. Put icing into a piping bag.
  • Let cup cakes cool down. Top the cakes with icing. Sprinkle extra orange zest on top for garnish.

3/4 cup sour cream

1 cup shredded sharp Cheddar
2 cups light brown sugar
1 cup chopped cooked bacon (no bacon bits)
6 egg yolks
1 tablespoon lemon juice
1 tablespoon Worcestershire sauce
1 teaspoon vinegar
1 teaspoon hot sauce, such as Tabasco
1 cup clarified butter
1/3 cup chopped fresh parsley
Kosher salt and freshly cracked pepper
2 dozen fried eggs, for topping the cupcakes

Steps:

  • For the cupcakes: Preheat the oven to 350 degrees F. Line two 12-count muffin tins with paper cupcake liners.
  • Combine the all-purpose flour, cake flour and baking soda in bowl; set aside. In a separate bowl, mix the sour cream, vanilla and eggs; set aside.
  • Heat the beer and butter in a saucepan over medium-high heat until the butter is just melted. Stir in the cheese, remove from the heat and whisk in the brown sugar. Slowly add the beer mixture to the egg mixture, stirring. Fold/gently stir in the dry mixture, then fold in the bacon.
  • Fill the muffin cups three-quarters full with the batter. Bake until an inserted toothpick comes out clean, 20 to 25 minutes. Let the cupcakes cool on a wire rack.
  • For the hollandaise sauce: In the container of a blender, combine the egg yolks, lemon juice, Worcestershire, vinegar and hot sauce. Cover and blend for about 5 seconds.
  • Put the clarified butter in a glass measuring cup. Heat in the microwave until completely melted and hot, about 1 minute. Set the blender on high speed and pour the butter into the egg yolk mixture in a thin stream; it should thicken almost immediately. Fold in the chopped parsley once the sauce has thickened. Season with salt and pepper. Keep the sauce warm until serving by placing the blender container in a pan of hot tap water.
  • Top each cupcake with a fried egg and add some hollandaise. Serve warm.

2 (16 ounce) packages vanilla frosting
¾ cup chocolate sandwich cookie crumbs
24 chocolate covered graham cracker cookies

Steps:

  • Prepare and bake cake mix according to package directions for cupcakes.
  • In a medium bowl stir 1 package of frosting with the cookie crumbs. Frost cooled cupcakes.
  • Fill a pastry bag, fitted with a plain tip, with remaining white frosting. Write R.I.P. on each chocolate covered graham cracker cookie. Stand a decorated cookie on top of each cupcake so that it looks like a tombstone. Place the cupcakes on a large cookie sheet that has been covered with green paper. Place paper ghosts and bats randomly through the graveyard. Serve!

This isn't a recipe so much as it is a method. If you keep coarse sugar (turbinado, or AA-grade large crystal coarse sugar) around and don't want to buy colored sugar, this is the method for making colored sanding sugar-- gel food dye is the best for this but I also included instructions for the liquid food coloring you can pick up in most grocery stores. (1 serving = 1 tablespoon)

1 cup coarse turbinado sugar
gel food coloring (just a teeny dab! a little goes a long way)
water, a couple drops
4 -10 drops food coloring

Steps:

  • If using the GEL METHOD:.
  • Put the sugar into a bowl.
  • On a spoon, put a little dab of the color(s) you want to use. A little goes a long way; gel colors stain much more deeply than liquid.
  • With a toothpick or the tines of a fork, mix the dab with a few drops of water-- no more than 4-5 drops of so. Be really careful with this step because if there's too little water, it won't diffuse enough. Too much water and the color won't stick. I like using a medicine dropper for this.
  • Carefully stir the spoon into the bowl of sugar, mixing thoroughly.
  • Shake the bowl occasionally to properly disperse the coloring.
  • Let the bowl of sugar sit in a safe area that is cool and dry for at least 10 minutes so the color can dry.
  • If using the LIQUID METHOD:.
  • How many drops you use determine how deep you'd like the color to be or how many are required to get a certain hue. About 4-5 are medium shade depending on which one you use, ie you only need about 2 or 3 of red to get pink but about 8-10 for red.
  • Put the drops on a spoon, and mix thoroughly through the bowl of corase sugar.
  • Shake the bowl a few times to disperse all the dye. If it looks like "spotting", add another 2-3 drops of coloring to the spoon and mix again.
  • When you are satisfied with the color, let the bowl sit in a cool dry area for about 5-10 minutes to let the color seep in and dry.
  • FUN TIPS:.
  • For rainbow sugar using the liquid dyes, don't put the dye on the spoon. Randomly put a few drops in the bowl and quickly stir it up, careful not to blend the colors together.
  • Put the sugar into separate bowls to get different colors instead of having to buy a whole container of colored sugar if you only want just a little bit.

1 1/2 teaspoons clear imitation vanilla extract, preferably McCormick's
1 1/2 teaspoons rosewater
A few drops pink food coloring
6 tablespoons whole milk
1/3 cup rainbow sprinkles (artificially colored cylinders, not nonpareils, sanding sugar or anything naturally colored)
12 flat-bottomed ice cream cones
3/4 cup unsalted butter, softened
2 cups powdered sugar
1 tablespoon whole milk
1 1/2 teaspoons rosewater
1/2 teaspoon vanilla extract
Pinch kosher salt
Food coloring, optional

Steps:

  • For the cupcakes: Preheat the oven to 350 degrees F.
