1 tablespoon minced garlic
4 skinless, boneless chicken breasts, cut into 1/2-inch pieces

Time 7h30m

Number Of Ingredients 7

8 bone-in chicken thighs
2 tsp olive oil
6 carrots, cut in 2-inch chunks
1 medium sweet onion, cut in wedges
1 c unsweetened coconut milk
1/4 c mild (or hot) curry paste.....your choice
OPTIONAL: CHOPPED PISTACHIOS, GOLDEN RAISINS, CILANTRO AND/OR CRUSHED RED PEPPER FLAKES

Steps:

  • 1. Trim excess skin and fat from chicken. In a 12-inch skillet cook chicken, skin side down, in hot olive oil for 8 minutes, or until browned. (Do not turn thighs). Remove from heat; drain and discard fat.
  • 2. In a slow cooker combine carrots and onion. In a bowl, whisk together half of the coconut milk and the curry paste; pour over carrots and onion (refrigerate remaining coconut milk). Place chicken, skin side up, on vegetables. Cook on HIGH for 3 1/2 to 4 hours, or on LOW for 7 to 8 hours.
  • 3. Remove chicken to platter. Skim off excess fat, then stir in remaining coconut milk. Top each serving with your choice of pistachios, raisins, cilantro, and/or crushed red pepper flakes. Enjoy!

Tips:

-
  • Use a heavy bottom pot or Dutch oven for even heat distribution and to prevent sticking.
  • -
  • Choose a curry powder that you enjoy. There are many different brands and flavors available, so experiment until you find one that you like.
  • -
  • If you don't have curry powder, you can make your own by combining ground cumin, coriander, turmeric, fenugreek, ginger, garlic, and chili powder.
  • -
  • Brown the chicken before adding it to the stew. This will help to develop flavor and prevent the chicken from becoming dry.
  • -
  • Use low sodium chicken broth to avoid the stew becoming too salty.
  • -
  • Add vegetables that you enjoy. Some popular choices include carrots, potatoes, peas, and corn.
  • -
  • Simmer the stew for at least 30 minutes to allow the flavors to develop.
  • -
  • Serve the stew over rice or noodles.
  • Conclusion:

Curried chicken stew is a hearty and flavorful dish that is perfect for a cold night. It is easy to make and can be tailored to your own taste preferences. With a few simple ingredients and a little bit of time, you can create a delicious and satisfying meal that the whole family will enjoy.
