Steps:
- Serving suggestion: white rice.
- For the irish moss mixture:
- Combine the coconut milk, moss and ice cubes in a blender and blend well until all of the Irish moss pieces have been pulverized. Stop blending halfway through and scrape down the sides and lid of the blender with a spatula to get any remaining pieces of moss. The warmer the mixture becomes the thicker and pastier it will be, and it will begin to stick to the sides of the blender, so try to keep it cool. The coconut milk can be put in the refrigerator to stay cold before blending.
- For the curry conch:
- Place the conch in a large saucepan and cover it by 2 inches with water. Add 2 tablespoons of the butter and bring to a boil, while watching for foaming over onto the stove. Turn down to a simmer and cook until the conch is tender to the bite, 40 minutes, and then allow it to cool in the water. Remove the conch and cut it into bite-size pieces. Return the large saucepan to a boil and allow the juices from the cooking process to reduce until only about 1 cup remains.
- Heat another saucepan with coconut oil and add the onions, peppers, garlic and Scotch bonnet pepper and cook over medium heat until the peppers are soft and the onions are translucent. Add the curry powder and cook for an additional 5 minutes, stirring occasionally to incorporate all of the ingredients, and allow the curry to toast slightly. Add the 1 cup of cooking juices and cook over medium heat for 15 minutes. Add 1/3 cup of the Irish moss mixture if you choose, as well as salt and black pepper to taste, and continue cooking, stirring occasionally, for 15 more minutes. The curry will thicken after adding the Irish moss mixture. Turn off the heat and stir in the remaining butter and the cilantro and serve.

Tips:
- Choose fresh conch: To ensure the best flavor and texture, select live conch with intact shells. Look for conch that are heavy for their size, with tightly closed shells. Avoid conch with cracked or damaged shells, as these may indicate that the conch is not fresh.
- Clean the conch properly: To clean the conch, first remove the meat from the shell. Using a sharp knife, score the conch meat around the columella (the central pillar of the shell). Then, using a spoon or fork, carefully pry the meat out of the shell. Once the meat is removed, rinse it thoroughly under cold water.
- Tenderize the conch: Conch meat can be tough, so it is important to tenderize it before cooking. One way to do this is to marinate the conch in a mixture of citrus juice, vinegar, and spices for at least 30 minutes. Another option is to pound the conch meat with a mallet or rolling pin until it is thin and tender.
- Cook the conch properly: Conch can be cooked in a variety of ways, including boiling, frying, and stewing. When boiling conch, be sure to cook it until it is opaque and tender, about 10-15 minutes. When frying conch, be sure to heat the oil to a high temperature before adding the conch. Conch can also be stewed in a flavorful sauce until it is tender and fall-apart.
- Pair conch with complementary flavors: Conch has a mild flavor, so it pairs well with a variety of bold flavors. Some common ingredients that complement conch include citrus fruits, tomatoes, onions, peppers, and spices. Conch can also be paired with various sauces, such as creole sauce, tomato sauce, or curry sauce.
Conclusion:
Conch is a versatile and delicious seafood that can be enjoyed in a variety of dishes. With its mild flavor and tender texture, conch is a great choice for a variety of recipes. Whether you are looking for a quick and easy weeknight meal or a special dish for a party, conch is sure to please. So next time you are looking for a new seafood dish to try, be sure to give conch a try.
