CURRIED ROAST POTATOES

Curried Roast Potatoes image

This indian inspired dish is a nice side dish for any meal. I've been using it for a few years and love it. It can be found in a very nice cook book called "The complete book of Indian Cooking" by Veronica Sperling and Christine McFadden -if you come across this book I recommend you buy it! Grinding the fresh spices in this recipe captures all the flavour before it has a chance to dry out but I'm sure that you could try your favorite curry powder with success if you don't have the called for supplies.

Categories     Milk/Cream     Side     Fry     Hanukkah     Vegetarian     Curry     Sweet Potato/Yam     Kosher     Pescatarian     Tree Nut Free     Soy Free

Yield Yield: 16 three-inch pancakes (D)

Number Of Ingredients 12

1 pound sweet potatoes, peeled
1/2 cup all-purpose flour
2 teaspoons sugar
1 teaspoon brown sugar
1 teaspoon baking powder
1/2 teaspoon cayenne powder
2 teaspoons curry powder
1 teaspoon cumin
Salt and freshly ground pepper to taste
2 large eggs, beaten
1/2 cup milk (approximately)
Peanut oil for frying

Steps:

  • 1. Grate the sweet potatoes coarsely. In a separate bowl mix the flour, sugar, brown sugar, baking powder, cayenne pepper, curry powder, cumin, and salt and pepper.
  • 2. Add the eggs and just enough milk to the dry ingredients to make a stiff batter. Add the potatoes and mix. The batter should be moist but not runny; if too stiff, add more milk.
  • 3. Heat 1/4 inch of peanut oil in a frying pan until it is barely smoking. Drop in the batter by tablespoons and flatten. Fry over medium-high heat several minutes on each side until golden. Drain on paper towels and serve.

Tips:

  • Choose potatoes that are firm and free of blemishes. Waxy potatoes, such as Yukon Gold or Red Bliss, hold their shape well and are less likely to fall apart when cooked.
  • Cut the potatoes into 1-inch cubes to ensure even cooking.
  • Soak the potatoes in cold water for 30 minutes before cooking to remove excess starch. This will help prevent them from sticking together.
  • Use a large skillet or Dutch oven to cook the potatoes. This will allow them to brown evenly.
  • Add the cumin seeds, curry powder, and turmeric to the oil in the skillet before adding the potatoes. This will help release their flavors.
  • Cook the potatoes over medium heat, stirring occasionally, until they are browned and tender. This should take about 20 minutes.
  • Season the potatoes with salt and pepper to taste.
  • Garnish the potatoes with chopped cilantro or parsley before serving.

Conclusion:

Curried cumin potatoes are a delicious and easy-to-make side dish that can be enjoyed with a variety of meals. They are perfect for a weeknight dinner or a special occasion. The combination of curry, cumin, and turmeric gives the potatoes a warm and flavorful taste that will please everyone at the table.
