6 medium sweet potatoes (about 4 pounds)
3/4 cup coconut milk
2 1/2 to 3 teaspoons Thai red-curry paste
1/4 cup plus 3 tablespoons pure maple syrup
4 tablespoons unsalted butter, room temperature, plus more for dishes
1 teaspoon coarse salt

Steps:

  • Preheat oven to 375 degrees. Prick sweet potatoes all over with a fork. Bake on a baking sheet until soft, about 1 hour. Let cool slightly. Peel potatoes, transfer to a bowl, and mash with a potato masher.
  • Bring coconut milk and curry paste to a simmer in a saucepan. Cook for 5 minutes. Add potatoes along with 3 tablespoons maple syrup, 2 tablespoons butter, and the salt, and stir.

3 lbs russet baking potatoes
salt
3 tablespoons butter
1 large onion, finely chopped
1 tablespoon minced fresh ginger
1 clove garlic, minced
2 tablespoons curry powder
1/2 cup sour cream
1/2 cup plain low-fat yogurt
1 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • Peel the potatoes and cut them into 1-inch chunks, dropping them into a large pot of cold water as they are cut.
  • Add a big pinch of salt, cover, and bring to a boil over high heat.
  • Boil until tender when pierced with a fork, 15 to 20 minutes.
  • Drain and return to the hot pan.
  • Meanwhile, melt 2 tablespoons of the butter in a large heavy skillet over moderate heat.

¾ cup milk

Steps:

2 tablespoons apple cider
2 tablespoons unsalted butter, in small cubes
1 teaspoon coarse salt
1 teaspoon ground cinnamon

Steps:

  • Place potatoes in a large pot of salted water. Bring to a boil, reduce heat, and cook until potatoes are tender, 12 to 15 minutes. Drain and return to pan. Dry over low heat 2 minutes.
