2 lbs ground chuck
2/3 cup chopped sweet onion
1/3 cup chopped green pepper
1/3 cup chopped red pepper
3 tablespoons chopped parsley
3 garlic cloves, chopped
1 1/4 teaspoons chili powder
1 teaspoon dried sage
1 1/4 teaspoons seasoning salt
2 teaspoons ground pepper
3/4 cup milk
2 eggs
1/4 cup Worcestershire sauce
2/3 cup italian style dry breadcrumbs
4 slices bacon
1 (15 ounce) can chopped tomatoes
1/4 cup ketchup
3 tablespoons brown sugar
1 teaspoon seasoning salt
1 1/2 teaspoons dry mustard
1 teaspoon ground pepper

Steps:

  • first, prepare 2 large pieces of foil to wrap meat loaf. put four slices of bacon on foil.
  • in large mixing bowl, combine all remaining ingredients (except for sauce). i find it is easier just to use my hands! mold the beef mixture loosely in a nice loaf and place over bacon strips. seal and refrigerate overnight (or all day).
  • before baking, open foil and turn loaf so that bacon is now on top. reseal tightly, place on baking sheet, and bake at 350 degrees for about an hour. open foil, and drain excess juices.
  • combine sauce ingredients in saucepan over low heat, and then spoon over loaf. bake uncovered, about 30 minutes longer. i like to put the loaf under the broiler for about 2-3 minutes to crisp the bacon.

5 poblano peppers
cooking spray
12 pitted Medjool dates
20 ounces 90%-lean ground beef
5 ounces goat cheese
¼ cup barbeque sauce (such as Jack Daniel's®)
¼ cup plain bread crumbs
1 egg
2 tablespoons barbeque sauce (such as Jack Daniel's®)

Steps:

  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler. Arrange peppers on a baking sheet.
  • Broil peppers in the preheated oven until bubbling and skin becomes blackened, 5 to 10 minutes per side. Remove from oven and transfer peppers to a bowl of ice water; set aside for skin to loosen from peppers, about 10 minutes. Remove peppers from water and peel blackened skin from peppers and remove seeds.
  • Preheat oven to 350 degrees F (175 degrees C). Spray a 9x5-inch loaf pan with cooking spray.
  • Place peppers and dates in a food processor; pulse until evenly combined.
  • Mix pepper-date mixture, ground beef, goat cheese, 1/4 cup barbeque sauce, bread crumbs and egg together in a bowl or in a stand-mixer until evenly combined. Pour beef mixture into the prepared loaf pan. Spread 2 tablespoons barbeque sauce evenly over meat mixture.
  • Bake in the preheated oven until no longer pink in the center, about 1 hour. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

1 cup panko breadcrumbs
1 cup whole milk
2 lb ground beef
2 large eggs, beaten
½ cup fresh parsley, roughly chopped
1 tablespoon worcestershire sauce
½ teaspoon dried thyme
1 tablespoon kosher salt
1 teaspoon freshly ground black pepper
½ cup ketchup

Steps:
