HEALTHIER SOUR CREAM BANANA DATE BREAD
This is my take on healthifying (is that a real word??) the super-popular Recipe #9351. I added dates and eliminated the sugar entirely, swapped out the white flour for whole wheat, and substituted grapeseed oil for half the butter. The result was a super moist loaf that was just sweet enough - the sweetness from the dates and bananas really shone through. It turned out so well I thought I would share.

Steps:
- Roll out the dough 1/8 inch thick on a lightly floured surface, fit it into a 10-inch (6-cup capacity) pie plate, and flute the edge decoratively. Chill the shell while making the topping and the filling.
- Make the topping:
- In a small bowl blend together the butter, the sugar, the cinnamon, and the flour until the mixture is combined well and chill the topping, covered, while making the filling.
- Make the filling:
- In a large bowl whisk together the sour cream, the sugar, the salt, the vanilla, the eggs, and the flour until the mixture is smooth, add the apples, peeled, cored, and sliced thin, and stir the filling until it is combined well.
- Spoon the filling into the chilled shell, smoothing the top, and crumble the topping evenly over it. Bake the pie in the middle of a preheated 350°F. oven for 1 to 1 1/4 hours, or until it is golden and the apples are tender, transfer it to a rack, and let it cool completely. Serve the pie with the ginger whipped cream.
Tips:
- For a creamier filling, use full-fat sour cream. If you don't have sour cream on hand, you can make your own by combining 1 cup of heavy cream with 1 tablespoon of lemon juice or white vinegar. Let it sit for 5 minutes, then use it as directed in the recipe.
- To make sure the pie crust is cooked through, pre-bake it for 10 minutes before adding the filling. This will help to prevent the crust from becoming soggy.
- If you don't have a pie plate, you can use a 9-inch springform pan. Just be sure to wrap the bottom of the pan with foil to prevent leaks.
- To make the pie ahead of time, bake it according to the recipe instructions and then let it cool completely. Cover the pie and refrigerate for up to 3 days. When you're ready to serve, let it come to room temperature for about an hour before slicing and serving.
Conclusion:
Date sour cream pie is a delicious and easy-to-make dessert that is perfect for any occasion.
