1-1/2 cups frozen O'Brien potatoes, thawed
2 teaspoons canola oil
1/2 cup shredded cheddar-Monterey Jack cheese, divided
2 bacon strips, cooked and crumbled
2 tablespoons mayonnaise
1/2 teaspoon prepared mustard

Steps:

  • In a small skillet, saute potatoes in oil until lightly browned. Remove from the heat; stir in 1/3 cup cheese, bacon, mayonnaise and mustard., Transfer to an ungreased 3-cup baking dish. Bake, uncovered, at 375° for 15-20 minutes or until cheese is melted. Sprinkle with remaining cheese.

I threw this together using ideas from different recipes, turned out really yummy. Chicken could be subbed for the tuna if preffered.I use cooking sherry from the grocery store which turns out fine if you dont have the real thing around.

1 (8 ounce) can tuna (drained )
1 (10 ounce) can cream of chicken soup
1/2 cup mayonnaise
1/4 cup milk
1 teaspoon celery seed
2 tablespoons sherry wine
1 tablespoon lemon juice
1/2 lemon, zest of
2 cups cooked rotini (or favourite pasta i.e shells or macaroni )
1 cup frozen peas
1/2 onion, chopped and sauteed
1 cup shredded sharp cheddar cheese
1 cup plain potato chips, crushed

Steps:

  • Mix the soup, mayonnaise, milk, sherry, lemon juice, celery seed and lemon zest together.
  • Add the tuna , onion, pasta and frozen peas to the mix.
  • Pour into a casserole and top with the cheese and the potato chips.
  • Bake in a 375 * oven for 30 minutes.

Who would've thunk that so few ingredients would make the best, and I mean BEST, mushrooms that you've ever tasted? I always serve this at Christmas. Use any combination of mushrooms you like, but make sure to use fresh and not canned.

3 tablespoons butter
2 ½ pounds sliced fresh mushrooms
1 (4 ounce) can sliced black olives, drained
3 cups shredded Cheddar cheese
2 tablespoons all-purpose flour
2 tablespoons butter, melted
½ cup fine dry bread crumbs

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Melt 3 tablespoons of butter in a large skillet over medium heat. Add the mushrooms, and saute until tender, about 10 minutes. Layer half of the mushrooms in the bottom of a casserole dish. Sprinkle with half of the olives, half of the cheese, and 1 tablespoon of flour. Repeat the layers then top with the bread crumbs. Drizzle 2 tablespoons of melted butter over the crumbs.
  • Bake for 30 minutes in the preheated oven, until bubbly and browned on the top.

Another Sweet Potato Casserole. This is my version. I have been making this for 30 years and it is a family favorite. Mine is made with baked sweet potatoes. I think it makes a big difference.

3 sweet potatoes, baked, mashed (3 cups)
1 cup sugar
1 teaspoon salt
1/2 cup butter (less if you have to)
2 eggs, beaten
1 teaspoon vanilla
1/2 cup evaporated milk
1 cup brown sugar
1/4 cup plain flour
3 tablespoons butter, melted
1/2 cup pecans, chopped
1/2 cup coconut

Steps:

  • Combine all the filling ingredients in large bowl and mix well. (I use my hand mixer for this)
  • Pour into a greased 3 quart baking dish.
  • Mix all topping ingredients. Spoon onto filling mixture.
  • Bake 350 degrees for 30-40 minutes. (depending on the depth of your baking dish).
