This is one of my favorite Publix Apron Recipes, I can't believe it, but Publix is only thing I miss about living in Florida. It is an easy, very delicious recipe and Miss Picky who is now a professional chef, actually likes this recipe.

1/2 cup sofrito sauce
17 ounces fully cooked pork roast au jus sauce
14 1/2 ounces canned tomatoes with garlic or 14 1/2 ounces onions, undrained
1 (11 1/4 ounce) box , frozen arepas
cooking spray
1/2 cup Mexican blend cheese, shredded
1/2 lime

Steps:

  • If using frozen sofrito thaw under cool running water, if needed.
  • Remove pork roast from package.
  • Drain(reserve au jus for another use if desired) place pork roast in a large saucepan.
  • Stir in sofrito and tomatoes.
  • Bring to a boil over medium heat.
  • Stir to break up meat.
  • Cook and stir for 7-8 minutes or until throughly heated.
  • Meanwhile, preheat medium fry pan over medium heat, about 2-3 minutes.
  • Remove pan from heat and spray with cooking spray.
  • Add arepas and cook for 2-3 minutes on each side or until throughly heated.
  • Transfer arepas to serving platter.
  • Top with pork mixture and sprinkle with cheese.
  • Squeeze a little lime juice over the tamale mixture to add a touch of fresh flavor, if desired.
  • Serve.
  • Enjoy.

1 pound lean ground beef (90% lean)
1 jalapeno pepper, seeded and diced
2 cups frozen corn, thawed
1 can (28 ounces) diced tomatoes, undrained
1-1/2 cups fat-free milk
1 cup cornmeal
1 can (4 ounces) chopped green chilies, drained
1 can (2-1/2 ounces) sliced ripe olives, drained
2 large egg whites, lightly beaten
1 envelope reduced-sodium taco seasoning
1 cup shredded reduced-fat cheddar cheese
1 cup salsa

Steps:

  • In a large nonstick skillet, cook beef and jalapeno over medium heat until meat is no longer pink; drain. Stir in the corn, tomatoes, milk, cornmeal, chilies, olives, egg whites and taco seasoning until blended. , Transfer to a 13x9-in. baking dish coated with cooking spray. Bake, uncovered, at 350° for 40 minutes. Sprinkle with cheese. Bake 5 minutes longer or until cheese is melted. Let stand for 10 minutes before cutting. Serve with salsa.
