1-1/2 cups sour cream onion dip
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
1 envelope ranch salad dressing mix
1 teaspoon onion powder
1 teaspoon garlic powder
1/2 teaspoon pepper
1 package (30 ounces) frozen shredded hash brown potatoes, thawed
2 cups shredded cheddar cheese
1/2 cup crumbled cooked bacon

Steps:

  • Preheat oven to 375°. In a large bowl, mix the first 6 ingredients; stir in potatoes, cheese and bacon. Transfer to a greased 13x9-in. baking dish. Bake until golden brown, 50-60 minutes. Freeze option: Cover and freeze unbaked casserole. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 375°. Bake casserole as directed until top is golden brown and a thermometer inserted in center reads 165°, increasing time to 1-1/4 to 1-1/2 hours.

2 cups shredded processed cheese
½ cup chopped onion

1 poblano chile, diced
2 onions, diced

8 slices bacon, fried and chopped

1 pound pork sausage
1 small onion, diced
5 eggs
½ cup milk

I found a few breakfast casserole recipes in my search and made them simpler and revised it so you can change them up depending upon the guests you may have. If you need a vegetarian casserole or have sausage on hand instead of bacon it's super simple to omit & replace with different ingredients that are sure to please! I make 2 kinds at the same time so everyone can pick their favorite!

24 ounces frozen hash brown potatoes
10 eggs
1 cup milk
8 ounces bacon or 8 ounces sausage
8 ounces shredded cheddar cheese
1 tablespoon onion powder
1/2 tablespoon garlic powder
1 teaspoon salt
1 teaspoon pepper

Steps:

  • Cut bacon up in small pieces (or break sausage up) cook in pan, drain on paper towel & set aside.
  • Preheat oven to 350 degrees.
  • Grease 9x13 casserole dish.
