2 packages fresh linguini, 9 ounces each
3 tablespoons extra-virgin olive oil
1/4 pound pancetta, cut as thick as bacon, chopped
3 to 4 cloves garlic, grated or chopped
1/2 to 1 teaspoon crushed red pepper flakes, depending on how spicy you like it
1/2 cup grated Parmigiano-Reggiano, a couple of handfuls
Freshly ground black pepper
4 large eggs
1/2 cup cream
2 cups ricotta cheese
A handful fresh flat-leaf parsley, finely chopped
1 cup shredded provolone or mozzarella cheese

Steps:

  • Preheat oven to 425 degrees F.
  • Heat water for pasta in large pot, salt it and add pasta for 3 minutes.
  • While water boils, heat a large skillet with extra-virgin olive oil, 3 turns of the pan, over medium-high heat. Add pancetta and brown, 3 to 4 minutes. Add garlic and red pepper flakes.
  • Drain pasta, add to pan and toss. Stir in Parmigiano-Reggiano and season with salt and pepper. Beat eggs with cream and pour over top of pasta. Let eggs begin to set up, about 1 minute, and pat pasta into even layer to make the pizza pie crust. Place in oven and cook 5 to 6 minutes.
  • Mix together the ricotta and parsley. Remove pie from oven and smooth the ricotta over the top. Scatter with the provolone or mozzarella and return to oven. Bake 8 minutes more until cheese is melted and golden at edges. Cut into wedges and serve.

1 ⅓ cups warm water
2 ¼ teaspoons active dry yeast
¼ cup olive oil
¼ cup melted butter
2 teaspoons white sugar
1 ½ teaspoons fine salt
½ cup cornmeal
3 ¾ cups all-purpose flour
2 teaspoons olive oil, or as needed, divided
4 cups pizza sauce, or to taste
4 ounces sliced provolone cheese
8 ounces fresh mozzarella cheese, cubed
1 pound spicy Italian sausage, casings removed
4 ounces shredded part-skim, low-moisture mozzarella cheese
2 ounces Parmigiano-Reggiano cheese
1 tablespoon olive oil

Steps:

  • Pour water into the bowl of a stand mixer fitted with a paddle attachment. Sprinkle in yeast and let dissolve, about 10 minutes. Add olive oil, melted butter, sugar, salt, cornmeal, and most of the flour. Knead, stopping to scrape down the sides occasionally and adding more flour as needed, until smooth and elastic.
  • Transfer dough to a lightly floured work surface. Knead in extra flour if needed. Roll into a ball and place in a bowl greased with 1/2 teaspoon olive oil. Cover with a plate and let rise in a warm spot until doubled in volume, 1 to 2 hours.
  • Meanwhile, let pizza sauce simmer in a pot over low heat until very thick, 60 to 90 minutes.

  • Poke dough to deflate and turn out onto your work surface. Press and stretch out dough into a round shape 3 to 4 inches larger than a 12-inch cast iron skillet. Brush skillet with 1 1/2 teaspoons olive oil. Place dough in the skillet; stretch and pull to evenly distribute it over the bottom and sides.
  • Lay provolone cheese over the bottom of the crust. Scatter fresh mozzarella on top. Add Italian sausage and firm mozzarella. Ladle pizza sauce generously on top. Grate Parmesan cheese on top. Fold the edges of the crust in towards the center to seal in the sides. Drizzle crust and center with 1 tablespoon olive oil.
  • Bake in the center of the preheated oven until crust sounds hollow and pizza is beautifully browned, about 35 minutes. Let rest for 10 minutes before slicing.

½ lb italian sausage
10 slices mozzarella cheese
½ cup freshly grated parmesan cheese
1 ¼ cups water, warm
2 ¼ teaspoons active dry yeast
2 teaspoons sugar
3 ¼ cups flour
¾ cup cornmeal
2 teaspoons salt
2 tablespoons butter, melted
1 tablespoon olive oil
2 tablespoons butter
1 onion, diced
1 teaspoon salt
1 teaspoon crushed red pepper

2 cloves garlic, chopped

This recipe turned out to be such a fluke! It all started with leftover spaghetti! So I searched for spaghetti pie recipes and got ideas. I knew that I had probably more spaghetti, so what started out at a 8" pie turned into a deep dish pizza. Instead of going to the store for more ingredients I cleaned out my fridge and freezer. I had 3 frozen, seasoned hamburger patties...3 different types of cheese, mushrooms and some marinara sauce. Once you have the ingredients on hand, everything snaps into order very quickly! Ideas for options are below

6 ounces spaghetti, cooked
1 egg, beaten
1/4 cup parmesan cheese
8 ounces ground beef
1 1/2 cups onions, chopped
2 cups mushrooms, chopped
2 garlic, minced
1 teaspoon italian seasoning
2 cups marinara sauce or 8 ounces tomato sauce
1 cup cottage cheese or 1 cup ricotta cheese
2 cups mozzarella cheese (or a mix blend of cheese)
1/2 cup parmesan cheese, grated

Steps:

  • Note: I used preseasoned hamburger patties I had in the freezer (I use Great Canadian Steak Spice - #62779) and I usually have 4 bags of Marinara Sauce from Cooking Light - #260197. Given that I used these two ingredients, my pizza pie was well seasoned, so the only spice I added was Italian Seasoning. If you are using regular ground beef, consider seasoning it with more garlic, salt and pepper. If using tomato sauce, add more seasoning such as Oregano, Basil and Italian Seasoning, salt, pepper and a little bit of sugar. I used a mix blend of Mozarella, Boccocconi Cheese and Gruyere cheese. The vegetables could be changed. Try adding red/green peppers or spinach for a different taste.
  • Directions:.
  • Combine the spaghetti, beaten egg and parmasan cheese. Mix well. Using a deep dish pizza pan, spread the spaghetti strands around the pan.
  • Spread the cottage cheese over the spaghetti layer.
  • In a large skillet sprayed with cooking oil, saute onion, mushrooms, garlic for about 4 minutes. Add the beef and cook until meat is brown and onion are tender. Drain off any fat and add Marinara Sauce or tomato sauce. Combine until well blended. Pour the beef mixture over the cottage cheese layer, spreading over to the sides.
  • Grate the cheese and spread over the beef layer. Sprinkle with parmesan cheese.
  • Preheat the oven to 350.
  • Cook the pizza pie for 30 minutes or until the cheese is melted and slightly browned on top. Remove from oven and let rest for 10 minutes.
