DEEP FRIED ZUCCHINI

Deep Fried Zucchini image

I was looking for a plain old battered, deep fried zucchini, but most on here are seasoned, or breaded and baked. So here is plain old beer battered zucchini, care of momofukufor2.com She has this amazing sriracha-lime mayonnaise for dipping (I'll put it in as the last step); between that and good old dill dip, these things disappear fast. My serving sizes are off, I just threw numbers in.

Categories     Dips and Spreads

Time 45m

Yield 10

Number Of Ingredients 13

2 tablespoons unsalted butter
1 medium onion, chopped
1 clove garlic, minced
4 cups grated zucchini
½ cup water
¾ teaspoon salt, or more to taste
½ teaspoon Italian seasoning
¼ teaspoon ground black pepper
1 tablespoon all-purpose flour, sifted
1 ½ cups milk
¼ cup cream cheese, softened
2 tablespoons shredded Parmesan cheese
1 cup shredded Cheddar cheese

Steps:

  • Melt butter in a medium pot over medium heat. Add onion and garlic to the melted butter and saute until onion begins to brown, 5 to 7 minutes.
  • Add grated zucchini, water, 3/4 teaspoon salt, Italian seasoning, and pepper. Reduce heat to medium-low and cook, stirring constantly, until zucchini is soft and most of the water has evaporated, about 15 minutes. Sprinkle flour over the zucchini and mix well, trying to avoid flour lumps. Reduce heat to low and cook for 2 minutes.
  • Add milk; stir well. Transfer about 1/2 cup of the zucchini mixture to a small bowl; add cream cheese and mix until well blended. Add this back to the pot and cook over low heat until dip begins to thicken, 5 to 10 minutes.
  • While dip is cooking, set an oven rack about 6 inches from the heat source and preheat the oven's broiler to low.
  • Remove dip from the heat and stir in Parmesan cheese. Taste and adjust salt if needed. Transfer dip to a shallow, oven-safe casserole dish and top with Cheddar cheese.
  • Broil in the preheated oven until Cheddar bubbles and starts to brown, 2 to 3 minutes.

Categories     Dairy     Garlic     Vegetable     Appetizer     Fry     Vegetarian     Yogurt     Zucchini     Bon Appétit     Pescatarian     Peanut Free     Tree Nut Free     Soy Free     No Sugar Added     Kosher

Yield Serves 4 to 6

Number Of Ingredients 7

4 large garlic cloves, pressed
1 teaspoon salt
2 cups plain yogurt
Vegetable oil (for deep frying)
1 1/2 cups plus 1 cup all purpose flour
1 2/3 to 1 3/4 cups water
4 large zucchini, thinly sliced on diagonal

Steps:

  • Combine garlic and 1 teaspoon salt in small bowl. Mix in yogurt. (Can be prepared 3 hours ahead. Cover and refrigerate.)
  • Pour oil into heavy medium saucepan to depth of 1 1/2 inches and heat to 350°F. Place 1 1/2 cups flour in medium bowl. Whisk in enough water to form smooth medium-thin batter. Place remaining 1 cup flour in large bowl. Working in batches, add zucchini to flour in bowl and toss, separating slices to coat well. Dip zucchini into batter and fry until golden, about 3 minutes per side. Transfer to paper towels and drain.
  • Place yogurt in center of large platter. Surround with zucchini and serve.

Tips:

  • For the best results, use fresh zucchini that is firm and not too large. If the zucchini is too big, it will be more difficult to slice and cook evenly.
  • To make sure the zucchini slices are evenly coated with batter, use a fork to dip them in the batter and then let the excess batter drip off before frying.
  • Fry the zucchini slices in hot oil until they are golden brown and crispy. This will help to ensure that they are cooked through and have a nice flavor.
  • Serve the zucchini slices with your favorite dipping sauce. Some popular options include ranch dressing, marinara sauce, or tzatziki sauce.

Conclusion:

Deep-fried zucchini is a delicious and easy-to-make appetizer or side dish. It is a great way to use up fresh zucchini and can be served with a variety of dipping sauces. Whether you are looking for a quick and easy snack or a more elaborate dish, deep-fried zucchini is sure to please. So next time you have some zucchini on hand, give this recipe a try!
