HEALTHY BANANA BREAD

This easy, healthy banana bread is the best! Moist, fluffy, and ultra delicious. Made with yogurt and whole wheat. So yummy and good for you!

Categories     Dessert     Snack

Time 1h5m

Number Of Ingredients 12

1 1/2 cups mashed overripe bananas (about 11 ounces or 3 large)
1 large egg
1/3 cup plain Greek yogurt (I used nonfat. OK to substitute vanilla, though the bread will be a bit sweeter.)
2 tablespoons canola oil ( or melted cooled coconut oil*)
1/3 cup light brown sugar
1/4 cup pure maple syrup
1 teaspoon pure vanilla extract
1 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon kosher salt
1 1/2 cups white whole wheat flour
3/4 cup semisweet chocolate chips ( or chopped dark chocolate (optional))

Steps:

  • Place the rack in the center of your oven and preheat the oven to 350 degrees F. Lightly grease an 8 x 4-inch loaf pan with nonstick spray and set aside.
  • Mash the bananas in the bottom of a large bowl until mostly smooth.
  • Whisk in the egg, then the yogurt and oil.
  • Whisk in the brown sugar, maple syrup, and vanilla. Sprinkle the baking soda, cinnamon, and salt over the top, then stir until combined.
  • Gently stir in the flour until barely combined, then fold in any mix-ins.
  • Scrape the mixture into the prepared pan. Bake for 50 to 60 minutes, until a toothpick inserted in the center comes out clean. Check at the 35-minute mark and tent with foil if the bread is browning too quickly at the corners. Place the pan on a wire rack and let cool for 15 minutes. Remove from pan and place on rack to finish cooling completely (for neat slicing), or enjoy warm and don't worry if the slices are messy.

HEALTHIER BANANA BANANA BREAD

Healthier Banana Banana Bread image

This recipe was really yummy to start with but I was looking for something a little healthier so I replaced some butter with non-fat yogurt and I eliminated the salt. It is super moist and tastes great.

Time 1h20m

Yield 12

Number Of Ingredients 8

2 cups all-purpose flour
1 teaspoon baking soda
¼ teaspoon salt
¼ cup butter
⅛ cup nonfat plain yogurt
¾ cup brown sugar
2 eggs, beaten
2 ⅓ cups mashed overripe bananas

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5-inch loaf pan.
  • Combine flour, baking soda, and salt in a large bowl. Beat butter, yogurt, and brown sugar with an electric mixer in a large bowl until light and fluffy. The mixture should be noticeably lighter in color. Add room-temperature eggs one at a time, allowing each egg to blend into butter mixture before adding the next. Stir in mashed bananas until well blended. Pour banana mixture to flour mixture; stir just to moisten. Transfer batter into prepared loaf pan.
  • Bake in preheated oven until a toothpick inserted into center of loaf comes out clean, 60 to 65 minutes. Let bread cool in pan for 10 minutes, then turn out onto wire rack to cool completely.

DEE'S HEALTH BREAD

Dee's Health Bread image

I found this recipe on allrecipe.com. I don't know who Dee is but I am grateful she came up with this recipe. My husband and FIL love it. My kids like it when I use it to make "mini" pizzas. Its full of fiber and you feel healthier eating it. Note: I have yet to mix all 4 cups of bread flour into the dough by hand. Also I put the dough into 4 loaf pans and they still come out great. I have put the dough in round casseroles dishes also.

Tips:

  • Use ripe bananas: The riper the bananas, the sweeter and more flavorful your banana bread will be. If you don't have any ripe bananas on hand, you can ripen them quickly by placing them in a paper bag with an apple or pear.
  • Don't overmix the batter: Overmixing the batter will make your banana bread tough. Mix just until the ingredients are combined.
  • Use a loaf pan with a nonstick coating: This will help prevent the banana bread from sticking to the pan.
  • Bake the banana bread at 350 degrees Fahrenheit: This is the ideal temperature for baking banana bread. If you bake it at a higher temperature, it will brown too quickly on the outside before it has a chance to cook through on the inside.
  • Test the banana bread with a toothpick: The banana bread is done baking when a toothpick inserted into the center comes out clean.

Conclusion:

Banana bread is a delicious and easy-to-make treat that can be enjoyed for breakfast, lunch, or dessert. With so many different recipes to choose from, there's sure to be a banana bread recipe that everyone will love. So next time you have some ripe bananas on hand, give one of these recipes a try!
