6 large sweet potatoes, peeled and cut into chunks
1 cup white sugar
½ cup brown sugar
2 tablespoons ground cinnamon
1 tablespoon butter, softened
miniature marshmallows, or as needed

Steps:

  • Place sweet potatoes in a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes; drain.
  • Preheat oven to 375 degrees F (190 degrees C). Grease a deep casserole dish with butter.

2 cups sugar
4 eggs, beaten
3/4 cup butter, melted
1 cup evaporated milk
1 teaspoon nutmeg
1 teaspoon cinnamon
2 cups miniature marshmallows
1 cup flaked coconut
1 1/2 cups crushed corn flakes
1/2 cup brown sugar
1 cup chopped pecans
3/4 cup butter, melted

Steps:

  • Mix mashed sweet potatoes with sugar, eggs, 3/4 cup butter,evaporated milk, nutmeg, cinnamon, marshmallows and coconut. Put into a greased 9 X 13 inch baking dish.
