1/2 cup chopped onion
1/4 cup chopped celery
2 cups uncooked elbow macaroni
1 (10 3/4 ounce) can condensed cream of chicken soup
1 (10 3/4 ounce) can condensed cream of mushroom soup
2/3 cup milk
1/2 teaspoon salt
pepper, to taste
1/2 cup chopped green bell pepper
1 (16 ounce) can whole kernel corn, drained

Steps:

  • In a skillet, brown ground beef with onion and celery. Stir to break up meat. Drain.
  • Cook macaroni as directed on package. Drain.
  • In a 2 1/2-qt. casserole dish, combine the soups, milk, salt and pepper. Stir in the ground beef, macaroni, green pepper and corn.
  • Bake at 350 degrees F for 30 minutes.

2 large eggs, beaten
1 c. freshly grated Parmesan
1/4 c. freshly chopped parsley
2 tbsp. extra-virgin olive oil
1 (32-oz.) jar marinara sauce, or homemade marinara

Steps:

  • Wrap a baking sheet in foil and lightly spray with cooking spray.
  • In a small bowl, soak bread crumbs in milk for 20 minutes.
  • In a skillet over medium heat, heat the olive oil. Cook and stir onions in hot oil for 20 minutes, or until translucent.
  • In a large mixing bowl, combine the beef and pork. With a rubber spatula, combine the onions, bread crumb mixture, eggs, parsley, garlic, salt, black pepper, red pepper flakes, Italian herb seasoning, and Parmesan cheese into the meat mixture. Refrigerate for about an hour, covered.
