3 tablespoons olive oil, divided
1 onion, minced
4 cloves garlic, minced
1 tablespoon Italian seasoning
1 pound medium ground beef
1 pound lean ground pork
2 eggs, beaten
1 cup bread crumbs
1 cup freshly grated Parmesan cheese
1 cup milk
1 teaspoon salt
1 teaspoon ground black pepper

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Drizzle a large baking sheet with about 2 tablespoons olive oil.
  • Heat remaining olive oil in a small saute pan over medium heat. Cook and stir onion in the hot oil until translucent, 5 to 7 minutes. Add garlic and Italian seasoning; continue to saute until garlic is softened, 2 to 3 minutes. Remove from heat and allow to cool enough to handle.

200 g minced beef
200 g ground pork
1/2 bunch flat leaf parsley
2 tablespoons grated parmesan cheese
2 garlic cloves, chopped
3 tablespoons fine breadcrumbs
milk, enough to cover breadcrumbs
plain flour
2 (400 g) cans chopped tomatoes
3 garlic cloves, halved
1/2 red chili pepper, finely sliced
2 tablespoons pitted green olives, drained
1 bunch fresh basil
1 tablespoon chopped fresh oregano
sea salt
fresh ground black pepper
olive oil

Steps:

  • Heat the oven to 180°C.
  • Soak the breadcrumbs in the milk.
  • Lightly fry the shallots, garlic and chilli. When they have sweated down add the white wine and reduce for a minute or 2 until it has almost evaporated. Add the tomatoes along with the basil, oregano and finally the olives. Simmer to reduce (this should take 5-10 mins).
  • While the tomato sauce is cooking, make up the meatballs: Into the mince add the parsley, parmesan, garlic and add soaked breadcrumbs, mix well. Season with a little salt and pepper.
  • Shape into walnut sized balls and lightly coat the meatballs in the flour and fry in hot olive oil until golden. Add the meatballs to the tomato sauce and bake in the oven for 10 minutes.
  • Serve with basmati rice, or choice of pasta.
