This recipe is awesome! So delicious! Grinding the fish is key! It absorbs all the flavors and the lime juice cooks the fish! People will ask you for the recipe! My bf asks for it at least very other week and my family expects it at every gathering! I usually cook it overnight! The flavor is amazing! Serve with chips or tostadas, sliced avocados, and for those spice seekers a whole serrano. Hope you guys enjoy!

CEVICHE DE PESCADO

Categories     Fish     Appetizer     No-Cook     Lime     Corn     Hot Pepper     Sweet Potato/Yam     Summer     Yuca     Lettuce     Pescatarian     Dairy Free     Wheat/Gluten-Free     Peanut Free     Tree Nut Free     Soy Free     No Sugar Added     Kosher

Yield Serves 6

Number Of Ingredients 14

2 pounds white-fleshed skinless fish fillets such as flounder, sole, or corvina (cod)
Salt
1 cup fresh lime juice (about 12 limes)
1/2 teaspoon salt
1 small clove garlic, chopped very fine
1 or 2 fresh aji amarillo (yellow Peruvian chili), seeded and chopped fine, or substitute the canned aji
1 teaspoon chopped parsley
1 teaspoon chopped cilantro
1 medium onion, chopped fine (1/2 cup)
3 or 4 lettuce leaves
4 ears of corn, cooked and cut into 2-inch pieces
1 pound sweet potatoes, roasted in the skin, peeled, and sliced into 1/2-inch-thick rounds
1 pound yuca, peeled, cut into little-finger-sized slices, and boiled until soft
A few strands of yuyo (a tangy seaweed, optional)

Steps:

  • 1. Cut the fish into strips 1 1/2 inches long by 1/4 inch wide. Soak the strips in lightly salted water for 1 hour to tenderize. Drain well.
  • 2. Put the fish in a bowl and fold in the lime juice carefully. Add the salt, garlic, and aji and refrigerate for 15 to 20 minutes.
  • 3. Just before serving, mix in the parsley, cilantro, and onion.
  • 4. To serve, line a bowl or large platter with the lettuce. Place the ceviche in the center. Surround it with 3 separate mounds: corn pieces at the top of the platter, sweet potato slices on one end, yucca on the other. Garnish with the seaweed, if using.

Tips:

  • Use the freshest fish possible. Swai is a mild-flavored fish, so it's important to use fish that is fresh and free of any off-odors.
  • Cut the fish into small pieces. This will help the fish to marinate more quickly and evenly.
  • Use a variety of citrus juices. Lemon, lime, and orange juice are all great choices for ceviche. You can also use a combination of juices.
  • Add some heat. If you like your ceviche spicy, you can add some chopped jalapeño or serrano pepper. You can also use a hot sauce or chili powder.
  • Marinate the fish for at least 30 minutes. This will give the fish time to absorb the flavors of the marinade.
  • Serve the ceviche chilled. Ceviche is best served cold, so make sure to chill it for at least 30 minutes before serving.

Conclusion:

Swai ceviche is a delicious and refreshing dish that is perfect for a summer party or potluck. It's easy to make and can be tailored to your own taste preferences. So next time you're looking for a light and healthy meal, give swai ceviche a try!
