1 pound imitation crab meat (flaked style, or sticks cut into slices)
1/2 cup celery (finely chopped)
3 tablespoons red onion (finely chopped)
1/2 teaspoon Old Bay seasoning
2 teaspoons lemon juice
salt and pepper to taste
1/2 cup mayonnaise
1 1/2 tablespoons fresh dill (chopped, plus more for garnish)

Steps:

  • Add all of the ingredients to a large bowl. Stir gently to combine.
  • Serve immediately, or cover and chill for up to 2 days.
  • Sprinkle with additional chopped dill for garnish if desired.

Killer Crab Cakes and Bitter Salad with Sweet Red Pepper Dressing image

1 starchy potato, peeled and thinly sliced
2 cloves garlic
Coarse salt
Handful fresh flat-lead parsley
Couple sprigs fresh thyme, leaves finely chopped
1/2 lemon, zested and juiced
1/2 teaspoon crushed red pepper flakes
2 (6-ounce) tubs fresh lump crabmeat, available at fresh seafood counter
7 tablespoons extra-virgin olive oil, divided
2 roasted red peppers
1 small shallot, chopped
2 teaspoons sugar
2 tablespoons red wine vinegar
Black pepper
1 small escarole, chopped
1 small head radicchio, chopped
1 endive, chopped

Steps:

  • Cook potatoes in boiling water 6 to 7 minutes until tender, drain, scatter across a large flat surface to cool and dry, 5 minutes. Smash the garlic with salt to make a paste and add to potatoes along with thyme, parsley, lemon zest and crushed red pepper flakes. Feel through the crab as you add it to the potatoes to check for shells. Mix together to combine and form into 4 (4 to 5-inch) super sized, killer crab cakes.
  • Heat 3 tablespoons extra-virgin olive oil in a nonstick skillet over medium to medium- high heat. Add the cakes and cook 5 minutes on each side or until deep golden brown.
  • Combine the roasted red peppers, shallot, sugar, the juice of 1/2 lemon and the red wine vinegar in a food processor. Stream in the remaining 1/4 cup extra-virgin olive oil and form a dressing. Stop the processor and season with salt and pepper, to taste. Combine the greens in a salad bowl and dress them. Adjust salt and pepper, to your taste. Serve crab cakes on a bed of salad.

This was fixed by my grandmother every Thanksgiving and was my favorite dish. It was a dish her family made during the depression, crab must have been prevalent then. Very simple to make with only 4 ingredients. My niece that hates onions even loves this. My measurements are not exact because I just throw it together, you may need to adjust it some. Wouldn't be Thanksgiving without it in our family.

2 heads iceberg lettuce, shredded thin
1/2 cup yellow onion, diced (to taste)
8 ounces crab (can use imitation)
1 -2 cup mayonnaise
salt and pepper

Steps:

  • In large bowl add shredded lettuce in 1/4-inch strips the thiner the better, but not too thin.
  • Dice onion and add to bowl. You can use less or more onion, but it has to have onion. I often add more depending on the hotness of the onion.
  • Chop crab and add to bowl, sometimes I add more crab.
  • Rule that I generally use is for every head of lettuce, I use at least 4 oz (or more) of crab and 1/2 of an onion.
  • Add 1 cup mayonnaise to bowl toss, add rest of mayonnaise by 1/2 cup tossing well after each. You may not need it all depending on the size of your heads of lettuce.
  • Salt and pepper to taste. This requires a lot of pepper you should be able to see the little black dots.
  • Left over this is good it seems to marinate and become even better.

Tips:

  • Use fresh crab meat. Fresh crab meat has a sweeter, more delicate flavor than canned or frozen crab meat. If you can't find fresh crab meat, you can use canned or frozen crab meat, but be sure to drain it well before using.
  • Choose the right kind of mayonnaise. There are many different types of mayonnaise available, so choose one that you like the taste of. A good quality mayonnaise will make a big difference in the flavor of your crab salad.
  • Add some crunch. Adding some crunchy ingredients, such as celery, onion, or almonds, will give your crab salad some texture and help to balance out the richness of the mayonnaise.
  • Season your crab salad to taste. Be sure to season your crab salad with salt and pepper to taste. You can also add other seasonings, such as lemon juice, dill, or tarragon, to taste.
  • Serve your crab salad chilled. Crab salad is best served chilled. You can either chill it for a few hours before serving or you can make it ahead of time and store it in the refrigerator for up to 3 days.
