DEVIL'S FOOD CAKE I

Devil's Food Cake I image

This is an old-fashioned, but easy-to-make devil's food cake recipe. Pound cake like texture and sinfully chocolately. This is from an old Philadelphia Bakery. Great when frosted with Chocolate Fudge Buttercream Frosting.

Yield 24

Number Of Ingredients 10

½ cup butter
3 (1 ounce) squares unsweetened chocolate
2 cups white sugar
2 eggs
1 cup water
2 ¼ cups all-purpose flour
1 ½ teaspoons baking soda
¼ teaspoon salt
¼ cup milk
1 teaspoon distilled white vinegar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease and flour one 9x13 inch pan or two 9 inch round pans.
  • In a small pan melt the butter or margarine with the unsweetened chocolate. Set aside to cool slightly.
  • Cream together the sugar and the eggs until light in color. Add the chocolate mixture to the eggs and temper mixture by beating well (so you don't end up with scrambled eggs!) Add 1 cup boiled water (still warm) and blend well. Mixture will be very liquid.
  • Mix together the flour, baking soda, and salt. Add this mixture to the chocolate mixture and blend well.
  • Mix together the vinegar and the milk and stir into the chocolate batter. Pour into prepared pan(s).
  • Bake at 350 degrees F (175 degrees C) for 30 minutes or until a toothpick inserted in the center comes out clean. Cake divides well for filling with mousse, or ganache, or black forest fillings. The best clue to this cake being nearly done is that you will start to smell the aroma of chocolate filling your house!

CHOCOLATE OAT CAKE-MIX COOKIES

Chocolate Oat Cake-Mix Cookies image

I always make my cookies from scratch, but I was intrigued by the idea of using cake mix, so I gave it a try. I live in high altitude and added extra flour and my texture was great- chewy, chubby, and soft in the middle. You may want to try mixing some good-quality peanut butter chips with the semi-sweet.

Time 15m

Yield 16 serving(s)

Number Of Ingredients 8

1 (18 1/4 ounce) package devil's food cake mix
2 eggs
1/2 cup butter or 1/2 cup margarine, melted
1/2 cup oatmeal
1/4 cup all-purpose flour (This is for high altitudes and I added it. I loved the texture which was chewy and not too cakey) (optional)
6 ounces semi-sweet chocolate chips
1 -2 tablespoon water, mixed with
instant coffee (If you added the extra flour the dough will need this)

Steps:

  • In a mixing bowl, combine dry cake mix, flour, eggs, butter, and oats, and chips.
  • Add the extra water if dough is too crumbly.
  • Drop by heaping tablespoons onto ungreased baking sheets.
  • Bake at 350 degrees for 9-11 minutes, or until set.
  • Note: I baked the cookies with the additional flour in regular altitude but preferred using 375 temperature.
  • Cool for 5 minutes and remove to wire racks.

Tips:

  • For richer cookies, use melted butter instead of vegetable oil.
  • Add 1/2 cup of chopped nuts or chocolate chips to the batter for a more decadent cookie.
  • If you want a chewier cookie, chill the dough for at least 30 minutes before baking.
  • To prevent the cookies from spreading too much, flatten them slightly with a fork before baking.
  • Bake the cookies until the edges are golden brown and the centers are set.

Conclusion:

These devil's food chocolate cake mix cookies are a quick and easy treat that is perfect for any occasion. They are rich, chocolatey, and have a slightly chewy texture that is irresistible. With just a few simple ingredients, you can have a batch of these delicious cookies in no time. So next time you are craving something sweet, give this recipe a try. You won't be disappointed!
