FLAX SEED-BRAN MUFFINS

Flax Seed-Bran Muffins image

These are low-fat and low-sugar, which is good for us diabetics. I use a little real sugar with the Splenda, because the texture turns out better, and my blood-sugar levels are under control, but some diabetics may want to use a cup of Splenda and no brown sugar. (or use Splenda Brown Sugar Blend-I have never used it so don't know the proportions)

DIABETIC BRAN MUFFINS RECIPE - (4/5)

DIABETIC BRAN MUFFINS Recipe - (4/5) image

Provided by Tammy-2

Number Of Ingredients 11

1 cup natural bran
1 cup whole wheat flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 egg
1 cup buttermilk or sour milk
1/4 cup Splenda granular
1/4 cup unsweetened applesauce
1/3 cup cooking oil
1/2 teaspoon vanilla

Steps:

  • 1. In a large bowl, combine the flour, baking soda, baking powder and salt, stirring well. Push up around sides of the bowl, making a well in center. 2. In another bowl, stir the buttermilk with the bran. Let stand for about 5 minutes. 3. Add the remaining ingredients to the bran mixture, beating with a spoon until mixed. 4. Pour into the well in the flour mixture and stir to moisten (the batter will be lumpy). 5. Fill 12 greased muffin cups 3/4 full. 6. Bake at 375 degrees F for about 20-25 minutes. 7. Let stand for about 5 minutes, then remove the muffins from the pan.

Tips:

  • Choose the right flaxseed. Golden flaxseed has a milder flavor than brown flaxseed, making it a better choice for muffins. If you only have brown flaxseed, you can reduce its bitterness by roasting it in a pan over medium heat for 5-7 minutes, stirring constantly.
  • Grind the flaxseed finely. This will help it absorb more moisture and bind the muffins together. You can use a coffee grinder, spice grinder, or food processor to grind the flaxseed.
  • Use a combination of flours. Whole wheat flour and bran flour add fiber and nutrients to the muffins. You can also use all-purpose flour, but the muffins will be less healthy.
  • Don't overmix the batter. Overmixing can make the muffins tough. Mix the batter just until the ingredients are combined.
  • Bake the muffins at a high temperature. This will help them rise quickly and develop a golden brown crust.

Conclusion:

These diabetic flaxseed, wheat, and bran muffins are a healthy and delicious way to start your day. They're packed with fiber, protein, and omega-3 fatty acids, and they're low in sugar and carbohydrates. Plus, they're easy to make and can be enjoyed by people with and without diabetes. So next time you're looking for a healthy muffin recipe, give these a try!
