Lemon Cheesecake Ice Cream (Regular or Diet) for electric ice cr image

A yummy, rich, refreshing dessert on a hot summer evening, or any time. This is an old ice cream recipe which was developed before there was "fat free" Half & Half. The fat free Half & Half may be substituted in either version according to your preference. Note: This recipe contains uncooked eggs, you may use pasteurized eggs or substitute Egg Beaters or egg substitute for the raw egg yolks. You may use pasteurized egg whites, powdered egg whites, or egg white substitute for the raw egg whites. Cook time = the freezing time for my (brand) ice cream machine. There is a 1-2 hour chill time for the mixture prior to freezing.

DIET CHEESECAKE

Any time I try a regular low fat cheesecake, it tastes really fake to me. These ingredients are totally different than a regular cheesecake so while it isnt exactly the same, it does act as a fairly good substitute.

Time 1h10m

Yield 1 pie, 8 serving(s)

Number Of Ingredients 7

12 graham cracker squares
1 lb fat-free cottage cheese
1/2 cup skim milk
2 eggs
1/2 cup sugar
2 tablespoons lemon juice
3 tablespoons flour

Steps:

  • Crush graham crackers well and press them into the bottom of a round pan.
  • Blend the rest of the ingredients in a blender and pour over crust.
  • Bake at 350 for one hour.

Tips:

  • Use a variety of cheeses: Different cheeses will give your cheesecake a different flavor and texture. For a classic cheesecake, use a combination of cream cheese and sour cream. For a richer cheesecake, use mascarpone cheese or ricotta cheese. And for a lighter cheesecake, use cottage cheese or Greek yogurt.
  • Make sure the cream cheese is at room temperature: This will help it mix smoothly with the other ingredients. If the cream cheese is too cold, it will be difficult to mix and may cause lumps in your cheesecake.
  • Don't overbeat the batter: Overbeating the batter will incorporate too much air, which can cause the cheesecake to rise too much in the oven and then fall when it cools. Mix the batter just until it is smooth and well combined.
  • Bake the cheesecake in a water bath: This will help to prevent the cheesecake from cracking. Place the cheesecake pan in a larger pan filled with hot water. The water should come about halfway up the sides of the cheesecake pan.
  • Let the cheesecake cool completely before serving: This will help it to set properly. Let the cheesecake cool at room temperature for about an hour, then refrigerate it for at least 4 hours, or overnight.

Conclusion:

Cheesecake is a delicious and versatile dessert that can be enjoyed by people of all ages. With so many different recipes to choose from, there's sure to be a cheesecake that everyone will love.
