Directions:
Cabbage Soup Recipe
6 large green onions
2 green peppers
1 or 2 cans of tomatoes (diced or whole)
3 Carrots
1 Container (10 oz. or so) Mushrooms
1 bunch of celery
half a head of cabbage
1 package Lipton soup mix
1 or 2 cubes of bouillon (optional)
1 48oz can V8 juice (optional)
Season to taste with salt, pepper, parsley, curry, garlic powder, etc.
Slice green onions, put in a pot and start to saute with cooking spray.
Cut green pepper stem end off and cut in half, take the seeds and membrane out. Cut the green-pepper into bite size pieces and add to pot.
Take the outer leafs layers off the cabbage, cut into bite size pieces, add to pot.
Clean carrots, cut into bite size pieces, and add to pot.
Slice mushrooms into thick slices, add to pot.

Steps:

  • Remember: This diet should only be followed for 7 days at a time, with at least two weeks in between. Day One: Fruit: Eat all of the fruit you want (except bananas). Eat only your soup and the fruit for the first day. For drinks- unsweetened teas, cranberry juice and water. Day Two: Vegetables: Eat until you are stuffed will all fresh, raw or cooked vegetables of your choice. Try to eat leafy green vegetables and stay away from dry beans, peas and corn. Eat all the vegetables you want along with your soup. At dinner, reward yourself with a big baked potato with butter. Do not eat fruit today. Day Three: Mix Days One and Two: Eat all the soup, fruits and vegetables you want. No Baked Potato. Day Four: Bananas and Skim Milk: Eat as many as eight bananas and drink as many glasses of skim milk as you would like on this day, along with your soup. This day is supposed to lessen your desire for sweets. Day Five: Beef And Tomatos: Ten to twenty ounces of beef and up to six fresh tomtoes. Drink at least 6 to 8 glasses of water this day to wash the uric acid from your body. Eat your soup at least once this day. You may eat broiled or baked chicken instead of beef (but absolutely no skin-on chicken). If you prefer, you can substitute broiled fish for the beef one one of the beef days (but not both). Day Six: Beef and Vegetables: Eat to your heart's content of beef and vegetables this day. You can even have 2 or 3 steaks if you like, with leafy green vegetables. No Baked Potato. Eat your soup at least once. Day Seven: Brown rice, unsweetened fruit juices and vegetables: Again stuff, stuff, stuff yourself. Be sure to eat your soup at least once this day.

3 cups crushed plum tomatoes
2 1/2 cups pasta sauce
1/2 cup tomato paste (1 small can)
6 green onions
2 cups beef broth
1 bunch celery & tops
2 cups fresh green beans
2 green bell peppers
2 lbs carrots
2 teaspoons chili powder
1 teaspoon coarse salt
2 teaspoons paprika
1/8 teaspoon cayenne pepper
2 teaspoons prepared mustard
1 teaspoon ground black pepper

Steps:

  • In a very large stock pot, combine tomatoes, pasta sauce, tomato paste and beef broth.
  • Over med/high heat, bring mixture to a boil.
  • Reduce heat and simmer covered for 15 minutes.
  • Wash and rough chop carrots, celery (including tops), and green peppers into 1 inch cubes.
  • Wash, trim and cut green beans into 1 inch lengths.
  • Chop green onion into 1/4 inch lengths.
  • Add all vegetables to simmering pot.
  • Stir to combine.
  • Add chili powder, cayenne, mustard, salt, black pepper and paprika to soup mixture.
  • Stir and simmer on low for 60 - 90 minutes.

  • DIET PLAN:.
  • Eat soup any time you are hungry. Eat as much as you want, whenever you want. This soup will not add calories. The more you eat, the more you will lose. Fill a thermos in the morning if you will be away during the day.
  • Be sure to follow daily to nourish your body as needed.
  • Drink plenty of fresh pure water all day. Drink 1/2 of your body weight in ounces of water. If you weigh 100 pounds then drink 50 ounces of water. Also add optional kombucha to your diet for beneficial yeasts and bacteria for your digestive system.
  • DAY ONE: All fruits except bananas. Eat only the soup and fruits. Drink kombucha, unsweetened tea, cranberry juice, or water.

  • Put all the vegetables in a big soup pot and cover with water. Bring to a boil over high heat, then reduce the heat to medium and boil gently for 10 minutes. Cover, reduce the heat to low, and simmer until all the vegetables are soft. Stir in the black pepper and chopped herbs.

  • This soup can be served hot or cold. It can be pureed or partially pureed to vary textures. It can be seasoned differently for variety, with balsamic vinegar, lemon or lime juice, different fresh herbs, or chopped green onions.

The secret of this soup is low(er) carb veggies-like kale, watercress, turnips, pumpkin/squash, carrots, chayote, chards, chicory, okra, rutabaga (very low carb), brussels sprouts, chiles-use your imagination! Day 2: the potato seemed like a blessing from God. Day 4: mashed bananas with milk + honey/splenda. Day 5: the combination of steaks and tomatoes was divine. To salads or fresh veggies I added a little bit of extra-virgin olive oil and balsamic vinegar. (Servings reflect only the days you eat the soup.)

  • Day 4. Soup + bananas (at least 3) + skim milk: all you want.
  • Day 5. Soup + beef (up to 20 oz) + 6 tomatoes.
  • Day 6. Soup + beef (2, 3 steaks) + green leafy veggies: all you want. NO potatoes. (Veal, beef, chicken).
  • Day 7. Soup + brown rice + unsweetened fruit juice + veggies: all you want.
  • - I found this French version in the Net: 1 cabbage (green, purple, frisé, Chinese), 4 garlic cloves, 6 large onions, 2 boxes of tomatoes (peeled), 2 bell peppers, 5 carrots, one celery, 1 bunch of parsley, 3 L water, spices. Blanche cabbage 25 minutes. Cut everything in small pieces. Bring to a boil. Close and cook on low until soft.
  • - The recipes are just guidelines. I don't like leeks and they're a bit too expensive too, so don't use them. I added lots of garlic and onion (sautéed in a bit of olive oil), and herbs. Sprouts are a great addition, sprinkled just before eating. Once I added 1 tbsp of my favorite bottled salsa (Herdez) and a handful of chopped cilantro to my dish. When I was desperately hungry I ate some nuts (they do fill you up and are "good" fat) and once a thin slice of Mexican fresh cheese (low on fat). After the diet I kept carbs low, ate only sprouted bread, tortillas and chapatis (Ezekiel, Genesis, etc), or whole grain/brown rice bread. I use Splenda and try to avoid cane/beet sugar. When you think you might kill for a taste of chocolate, try this "Low Carb 3 Minute Chocolate Cake": 1/4 cup soy flour; 1 tbsp cocoa powder (Nestlé Toll House); 1/4 tsp baking powder; 5 (1 g) packets Splenda; 2 tsp melted butter; 1 tbsp water; 1 egg. Blend flour, cocoa, baking powder, splenda in a 2-cup baking dish. Add water, butter and egg; blend thoroughly with fork. Cover with plastic wrap and cut a small vent in the top. Microwave on HIGH 1 min, until knife comes out clean. Cool or eat warm with whipped cream. (This does NOT taste like soy!) Try also the "South Beach Muffin": 1 large egg; 1 1/2 tsp Splenda; 1 tsp cinnamon (I mix cinnamon + nutmeg); 2 tsp plain fat-free yogurt; 1/2 tsp baking powder; 3 tbsp ground flax seeds. Spray microwave safe ramekin/bowl with cooking spray (or use muffin liner). Mix egg and splenda with fork until well combined; add yogurt, blend well. Mix in flaxseed, cinnamon and baking powder until well combined. Pour in ramekin; microwave on HIGH 1:30 minute (Note: dish should be no more than 1/2 full; these rise a lot.) Best served hot. Then, there is the "South Beach Diet Flax Cracker": 4 tbsp flax seed meal; 2 tbsp chicken broth; 2 tbsp water; spices; salt. Mix flax and liquid. Add spices + salt. Spread thin on parchment paper. Microwave 2-3 minutes. Serve with Hummus bi Tahine, low fat/carb dip or cheese. If you like chapatti-like breads, you will love this.

1 stalk celery, thinly sliced

Steps:

  • In a medium saucepan, heat olive oil over medium heat.
  • Add scallions, celery, garlic, cumin, cayenne, salt, and pepper, Cook, stirring occasinally until vegetables soften.
  • Add cans of black beans, diced tomatoes, and chicken broth. Bring to a simmer and cook for 10 minutes.
  • Transfer 2 cups of soup to a blender and process until smooth. Return soup to pan and stir to combine.
  • Return to a simmer and cook for 10 minutes longer. season with lime juice, and adjust seasonings.
  • Serve with hot pepper sauce and sliced scallions on the side (not in ingredients).

1 lb peeled shrimp

Steps:

  • In a large pot heat oil over medium heat.
  • Add the ginger and garlic and cook until tender, 3 to 4 minutes.
  • Combine 1-cup broth with the cornstarch and blend until smooth.
  • Pour the cornstarch mixture into the pot and add the remaining broth, tofu, mushrooms, bamboo shoots, soy sauce, vinegar, sugar and crushed red pepper flakes.
  • Bring the soup to a boil and cook until thickened.
  • Add the frozen vegetables, shrimp and cilantro.
  • Simmer until shrimp is just opaque, about 10 minutes.
  • Stir in the spinach and cook until just wilted.
  • They say if you eat a full pot every 2 to 3 days, that is all you need to drop pounds fast.

HAMBURGER MINESTRONE SOUP (SOUTH BEACH DIET)

I came across this recipe for minestrone, adapted for the South Beach Diet, on the 3 Fat Chicks on a Diet boards a few years ago. It's become a family favorite since. It makes quite a lot of soup, but it reheats well. If making this for the South Beach Diet, watch out for added sugar in the tomatoes and beans-- a lot of canned beans and tomato products have sugar added to them. You can also substitute very lean ground turkey and chicken broth for the beef.

1 lb extra lean ground beef (less than 10% fat)
1 medium onion, chopped
1 quart reduced-sodium fat-free beef broth
6 cups water
1 (14 1/2 ounce) can diced tomatoes with juice, undrained (no sugar added)
2 cups finely shredded cabbage (I use bagged coleslaw salad mix to save time)
2 stalks celery, diced
1 (15 ounce) can kidney beans, rinsed and drained (or canneloni or great northern beans, no sugar added)
2 tablespoons italian seasoning
1 -2 garlic clove, minced
salt & pepper
parmesan cheese, for garnish

Steps:

  • Brown beef ovr medium heat in a 6-quart soup pot and drain (rinse in hot water, drain, and return to pot, if desired).
  • Add onion and garlic. Cook until onion is tender.
  • Add remaining ingredients (except cheese) and bring to a boil over medium-high heat. Reduce heat and simmer for 30 minutes.
  • Taste and adjust seasonings if needed.
  • Serve with Parmesan cheese sprinkled on top, if desired.

2 skinless chicken breast halves, with bone in
2 -3 large leeks, green and white parts, cleaned thoroughly, and then chopped
5 -6 stalks celery, cleaned and chopped
2 garlic cloves, smashed and chopped
2 tablespoons fresh gingerroot, not chopped (one large slice)
2 -4 dashes hot sauce (I like Crystal, It's mild yet flavorful)
1 -2 tablespoon salt
thinly sliced jalapeno
cilantro
sesame oil (the toasted, fragrant variety)
hot chili oil
salt
cooked rice (I prefer a blend of brown and wild rice)

Steps:

  • Put all the soup ingredients into a large 8-10 quart pot of water and bring to a boil.
  • Turn the heat down to medium-low and simmer for an hour our so until the chicken is tender and falling off the bone.
  • Remove the chicken and let it cool so you can handle it to remove the bones.
  • Shred the chicken and return to the pot.
  • Bring to a boil again, and then turn down on a very low simmer.
  • The longer it simmers, the tastier it becomes.
  • Just ladle some of the soup into a bowl, add a few scoops of rice and top with garnishes to taste.
  • This is just a basic recipe and has room for many tasty variables.
  • Sometimes I garnish with cumin, or toasted mustard seed and a sprinkle of curry powder--whatever I'm craving.
  • Basically, the soup is very low in fat and if you use the brown and wild rice, it is low in gluten.
  • Eat it exclusively for a day or two and you will notice a flatter belly and feel healthy and energized.
  • I keep a pot going on the back of the stove all the time so my family always has a nice healthy snack or quick meal on hand.

  • Reduce heat and simmer 5-7 minutes longer.
  • Remove about half of the mixture and place in a blender and puree, returned pureed soup to the pot (or if you have an immersion blender, use it in the pot for the entire batch).
  • Serve hot with chopped tomatoes and a few more sprigs of cilantro.

2 tablespoons olive oil, preferably extra virgin
2 onions, large white chopped or sliced
1 1/2 lbs chicken, boneless skinless diced
1 carrot, large finely chopped
2 garlic cloves, large minced
1 jalapeno pepper, minced with seeds
2 teaspoons thyme or 2 teaspoons oregano, finely minced
8 cups chicken broth, fat-free
1 (15 ounce) can black beans, drained
6 cups baby spinach leaves, packed
1 tomatoes, large finely diced
salt, to taste
pepper, to taste
7 tablespoons parmesan cheese, grated
lemon wedge (optional)

Steps:

  • Heat oil in a large stockpot over med. heat. Add onions and cook 10 minutes, stirring occasionally.
  • Add chicken and cook for 5 minutes (or until chicken is cooked through and onions are lightly browned), stirring occasionally.
  • Add carrot, garlic, jalapeno and thyme or oregano. Cook another 2 minutes.
  • Stir in broth and increase heat to high. Bring to a boil. Add beans, spinach and tomato. Bring back to a boil.
  • Turn off the heat and add salt and pepper to taste.
  • Sprinkle each serving with 1 T parmesan cheese. If desired add a squirt of lemon.
  • NOTES: To finely chop carrot, I coursely chop, put in a blender, add water to cover, then blend until carrots are desired consistency. Then drain and use in recipe. If you want to keep some of the nutrients, measure the water, and then subtract that amount of liquid from the broth. I also added the spinach when I add the carrot, garlic & jalapeno so it gets cooked more.

ROASTED TOMATO SOUP (SOUTH BEACH DIET PHASE 2)

2 1/2 lbs plum tomatoes, cut in half lengthwise
1 medium onion, diced

1 teaspoon dried basil

1 cup vegetable broth

Steps:

  • Heat oven to 425.
  • Line the baking pan with parchment paper. Arrange the tomatos, cut side up, on the pan. Scatter onion and garlic in a single layer around tomatoes. Sprinkle tomatoes, onion, garlic, with basil, oregano, salt and pepper to taste; drizzle with oil. Bake on the middle of the rack of the oven until tomatoes are golden on the bottoms and start to collapse, about 40 minutes.
  • Remove from oven and carefully transfer the contents of the pan to a blender. Add 1/2 cup broth and puree until smooth.
  • Transfer mixture to a medium saucepan. Stir in remaining 1/2 cup of broth and bring to a simmer over medium heat. Remove pan from heat and season soup with additional salt and pepper if desired. Serve warm.

It originally called for zucchini, but I leave it out as I dislike summer squash. Feel free to add some in if you like, though. I sometimes add in a can of navy beans, rinsed and drained, with the tomatoes. For South Beach Diet, make sure your tomatoes have no added sugar. It makes quite a bit, but it reheats fairly well--or you can cool and freeze it. Don't be afraid of the garlic--it mellows out a lot during cooking.
