680 g salmon fillets
2 tablespoons parsley, chopped
3 small garlic clove, pressed
1/2 tablespoon Dijon mustard
1/2 teaspoon salt (we love sea salt)
1/8 teaspoon black pepper, freshly ground
2 tablespoons light olive oil (not extra virgin)
2 tablespoons fresh lemon juice
lemon slice, for effect

Steps:

  • Preheat the oven to 450° F. Line rimmed baking sheet with foil.
  • In a small bowl, mix together: 2 Tbsp parsley, 2-3 pressed cloves garlic, ½ Tbsp Dijon, ½ tsp salt, ⅛ tsp pepper, 2 Tbsp oil and 2 Tbsp lemon juice.
  • Slice salmon into 4 portions and arrange them on a lined baking dish, keeping salmon skin-side-down.
  • Generously brush top and sides of salmon with sauce and top with fresh lemon slices.
  • Bake at 450°F for 12-15 min or until just cooked through and flaky. Don't over-cook.

1/8 cup mild olive oil
2 Tbsp fresh lemon juice

Steps:

  • Mix well in small bowl. Coat both sides of fish very well. Thicker on top. Preheat oven to 450. Line pan w Foil. Bake about 8-9 minutes for thin fillet and about 15 for thick cut. DO NOT OVER-COOK!! Check for flakiness. Enjoy

In a small bowl, combine 2 Tbsp freshly chopped parsley, 2-3 cloves pressed garlic, 1.5 tsp Dijon, ½ tsp salt, ⅛ tsp pepper, ⅛ cup olive oil and 2 Tbsp fresh lemon juice. Mix well. Cut salmon into even portions and lay them onto your lined baking dish skin side down. Generously brush all sides of your salmon with the sauce and top with fresh lemon slices. Bake at 450°F for 12-15 minutes or until just cooked through. Don't over-cook or your fish will be dry. Voila! Easy, excellent dish.

⅓ cup Dijon mustard
4 large cloves garlic, thinly sliced
1 red onion, thinly sliced
1 teaspoon dried tarragon
