WALNUT-DILL VINAIGRETTE

Walnut-Dill Vinaigrette image

Provided by Food Network

Categories     appetizer

Number Of Ingredients 10

1/4 cup walnut oil
1/2 teaspoon minced garlic
1/4 cup rich chicken or shellfish stock
1 teaspoon white wine Worcestershire
1 1/2 tablespoons Dijon mustard
1 teaspoon sherry vinegar (or to taste)
2 teaspoons chopped fresh chives
2 teaspoons chopped fresh dill
1 teaspoon grated lemon zest
Salt and freshly ground pepper, to taste

Steps:

  • Place all ingredients in a blender except the herbs and pulse at high speed until fully combined and creamy. Stir in herbs and correct seasoning with salt and pepper. Store covered in refrigerator for up to 3 days.

Tips:

  • Choose fresh, high-quality ingredients: The fresher your ingredients, the better your vinaigrette will taste. Use herbs that are still vibrant and green, and olive oil that is extra virgin and has a fruity flavor.
  • Use a good balance of ingredients: A good vinaigrette should have a balance of acidity, sweetness, and saltiness. Start with a basic ratio of 3 parts oil to 1 part vinegar, and then adjust to taste.
  • Emulsify your vinaigrette: This means whisking the oil and vinegar together vigorously until they are well combined and creamy. You can also use a blender or food processor to emulsify your vinaigrette.
  • Season to taste: Once you have emulsified your vinaigrette, taste it and adjust the seasonings as needed. You may want to add more salt, pepper, herbs, or honey.
  • Let your vinaigrette rest: Letting your vinaigrette rest for a few minutes before using it allows the flavors to meld together. This will give you a more flavorful dressing.

Conclusion:

Dill vinaigrette is a versatile dressing that can be used on a variety of salads, vegetables, and meats. It is light and refreshing, with a bright, tangy flavor. By following these tips, you can make a delicious dill vinaigrette that will enhance the flavor of your favorite dishes.
