DINNER IN A DISH CASSEROLE

Dinner in a Dish Casserole image

It took me two years to track down this recipe after it appeared at our ladies Curling Bonspiel Potluck! Since then it became a favorite not only at potlucks but at our house as well. An old fashioned comfort food enjoyed by adults and children alike. Great served with a green salad and crusty bread. This is the original recipe but you may add extra seasonings of your choice if you wish. Servings depend on just how hungry the crowd! Note - Have added the optional can of tomato soup mentioned in the instructions to the ingredient list. I always add the can of tomato soup for added flavor and extra creaminess.

1 1/2-2 lbs ground beef
2 tablespoons oil
1 medium onion, chopped
1 green pepper, chopped
1 (19 ounce) can tomatoes
1 (10 ounce) can tomato soup (or tomato sauce, I always add a can of tomato soup as we like the extra tomato flavor and creaminess)
2 tablespoons flour
1 teaspoon salt
1/4-1/2 teaspoon pepper
1/4 teaspoon sugar
1 -1 1/2 cup shredded cheddar cheese or 1 -1 1/2 cup cheese, of choice
cooking spray
1 (12 ounce) package noodles (your choice, I usually use elbow macaroni or broad egg noodles, youngsters love the bow knots)
2 tablespoons melted butter or 2 tablespoons margarine
3/4 cup breadcrumbs (I use the coarse crumbs)
2 tablespoons melted butter or 2 tablespoons margarine

Steps:

  • PREPARE CRUMB TOPPING.
  • In a skillet over medium heat melt the butter or margarine and lightly brown the crumbs.
  • PREPARE NOODLES.
  • Cook noodles according to package directions and drain.
  • Coat the noodles with melted butter.
  • PREPARE GROUND BEEF.
  • In a large skillet cook the beef, onions, and green pepper over medium heat until the meat is no longer pink then drain off excess oil.
  • Add tomatoes and blend in flour (for those wishing more tomato flavor you may add a ten ounce can of condensed tomato soup).
  • Add seasonings and simmer five minutes. For us the ingredients are right on, but as noted when originally posting the recipe -- you can add extra seasonings of your choice if you wish, if you are wanting a spicier version.
  • ASSEMBLY.
  • Spray your favorite 2 quart casserole or a baking dish with cooking spray.
  • Start your layers with noodles alternating with the hamburger.
  • Add the shredded cheese and top with the bread crumbs.
  • Bake uncovered in a 325 degree oven for 25 or 30 minutes (Time varies from oven to oven).

I haven't found anyone yet who can resist this saucy ground beef casserole topped with mashed potatoes. The peas and tomatoes add color and make a helping or two a complete meal. -Betty Sitzman, Wary, Colorado
