DIRTY RICE AND BEANS
I invented this version of dirty rice to accompany my husbands fantastic ribs. It's easy to make, but it does want to simmer for a good long time.

Tips:
- Use leftover rice: Dirty rice is a great way to use up leftover rice. If you don't have any leftover rice, you can cook some fresh rice ahead of time and let it cool completely before using it.
- Choose the right sausage: The sausage you use in your dirty rice will greatly affect the flavor of the dish. We recommend using a spicy sausage, such as Andouille or kielbasa. You can also use a mild sausage, such as breakfast sausage, if you prefer.
- Don't skimp on the vegetables: The vegetables in dirty rice add flavor, color, and texture to the dish. Be sure to use a variety of vegetables, such as onions, celery, bell peppers, and garlic.
- Season to taste: Dirty rice should be well-seasoned. Be sure to taste the dish before serving and adjust the seasonings as needed.
- Serve immediately: Dirty rice is best served immediately after it is cooked. However, you can also make it ahead of time and reheat it when you're ready to serve.
Conclusion:
Dirty rice is a delicious and versatile dish that can be made with a variety of ingredients. It's a great way to use up leftover rice, and it's also a hearty and satisfying meal. Whether you're serving it as a main course or a side dish, dirty rice is sure to be a hit.
