1 mango, peeled, seeded, and cut into 1/2-inch pieces
2 limes, zested and juiced
2 tablespoons balsamic vinegar
1/2 cup chopped fresh basil leaves
1 teaspoon ground cumin
1/3 cup extra-virgin olive oil
Kosher salt and freshly ground black pepper

2 tablespoons vegetable oil
1/3 cup white wine vinegar
2 tablespoons sugar
1 garlic clove, crushed
1 teaspoon dry mustard

2 medium top quality vine-ripened tomatoes, cut in 1/2-inch cubes
1 small red onion, cut in 1/2-inch pieces
2 celery ribs, diced
