Another celebrity recipe from my collection. I have never heard of October beans, but the University of Tennessee has this to say: "Horticultural beans, known as shelly or October beans, are grown on a limited acreage in Tennessee."

This is a great recipe for Cowboy Beans fixed in the slow cooker; and it is so EASY. It is from the "Fix-It and Forget-it Recipes for Entertaining". I have listed the ingredients for a single recipe, but I always double it because it is so popular where ever I take it. Also, I have used ground turkey instead of the beef with excellent results. It wasn't posted here yet so I will do it to be sure I won't lose this great recipe! Enjoy!

Time 1h30m

Yield 4-8 serving(s)

Number Of Ingredients 10

1 lb ground beef (ground turkey works just as well)
1 large onion, finely chopped
1 small green bell pepper, finely chopped
1 (28 ounce) can pork and beans (sometimes I use a bit more depending on can size)
1 1/2 cups ketchup
1 teaspoon vinegar
3 tablespoons brown sugar
2 teaspoons prepared mustard
2 teaspoons salt
1 teaspoon ground pepper

Steps:

  • Brown ground beef and drain.
  • Add onion and bell pepper and sauté until tender.
  • Add beef/onion/pepper and all other ingredients to a slow cooker.
  • Mix well.
  • Cook on low for 1 - 2 hours.

Tips:

  • Use quality ingredients: Fresh vegetables, flavorful spices, and tender cuts of meat will make all the difference in the taste of your cowboy beans.
  • Don't skimp on the bacon: Bacon adds a delicious smoky flavor to the beans. If you can, use thick-cut bacon for extra flavor.
  • Sauté the vegetables before adding them to the beans: This will help to caramelize the vegetables and develop their flavor.
  • Use a variety of beans: This will give your cowboy beans a more complex flavor and texture. Some good options include pinto beans, black beans, and kidney beans.
  • Add some spice: Cowboy beans are typically spicy, so don't be afraid to add some chili powder, cumin, or cayenne pepper to the pot.
  • Simmer the beans for at least an hour: This will give the beans time to absorb all of the flavors and become tender.
  • Serve the beans with your favorite toppings: Some good options include sour cream, shredded cheese, diced onions, and chopped cilantro.

Conclusion:

Cowboy beans are a delicious and hearty dish that is perfect for a casual meal. They are easy to make and can be tailored to your own taste preferences. So next time you're looking for a new recipe, give cowboy beans a try!
