2 tablespoons olive oil
1 small onion (diced)
1 pound chicken breast (cut into 1 inch cubes)
2 teaspoons salt (divided)
1 teaspoon black pepper
2 teaspoons garlic powder
1 teaspoon chili powder
1 teaspoon cumin
1 ½ cups uncooked long grain white rice
1 ½ cups chicken broth
15 ounces can tomato sauce
4 ounces can green chilies
Cilantro (for serving)

Steps:

  • Heat olive oil in a large skillet or pan, over medium heat. Add the onions and sauté until they soften slightly, about 5 minutes.
  • Increase the heat to medium high, add the cubed chicken. Season with 1 teaspoon salt, pepper garlic powder, chili powder, and cumin. Cook, stirring occasionally, until the chicken is cooked through, about 6-8 minutes.
  • Add the rice, remaining salt, and cook with the chicken to lightly toast the rice. Pour the chicken broth, tomato sauce, and green chilies. Stir to combine.
  • Bring mixture to a boil then lower the heat to a simmer and cover the pan, and cook the rice untouched until the rice is tender and all the liquid is absorbed, about 18 minutes.
  • Top with fresh cilantro, if desired

6 cup(s) nacho cheese doritos
- salt and pepper
1 teaspoon(s) each garlic and chili powder
1/2 teaspoon(s) each paprika and cumin
4 - chicken breasts or boneless skinless thighs
3 large eggs beaten
1/2 cup(s) flour
- olive oil
2 cup(s) salsa divided
2 cup(s) cooked rice
8 ounce(s) shredded cheddar cheese
- sour cream

Steps:

  • Process the doritos in food processor until fine. Add the salt, pepper, garlic powder, chili powder, paprika, and cumin. Mix well. Place in shallow bowl.
  • Place flour in another shallow bowl. Place beaten eggs in a third shallow bowl. Dredge each piece of chicken in the flour shaking off extra. Dredge in eggs mixture then press in Doritos mixture. Place on a plate and refrigerate 15 minutes.
  • Add oil to frying pan and cook until on both sides until browned then transfer to 350 degree oven to finish the cooking about 10 minutes.
  • Mix the cooked rice with 1 cup salsa. Serve the chicken cut into strips on top of rice. Top the chicken with more salsa then cheese and sour cream.

2 cups shredded cooked chicken
1 (10 3/4 ounce) can rotel, undrained
1 (10 3/4 ounce) can low-fat cream of chicken soup
1 (10 3/4 ounce) can low-fat cream of mushroom soup
1/4 loaf Velveeta cheese, diced
2 teaspoons cumin powder
crushed Doritos
1 tablespoon olive oil
1 medium onion, diced
2 cups Minute Rice
1 1/2 cups chicken broth
1/4 cup tomato sauce

Steps:

  • Heat olive oil in a saucepan over medium-high. Add onion and cook until tender.
  • Add rice and stir to coat in oil and cook about one minute.
  • Add broth and tomato sauce, bring to a boil, then cover and reduce heat to low for 5-10 minutes.
  • While rice is cooking, combine soups, Rotel, Velveeta and cumin in a large microwave-safe bowl. Microwave on High for 2 minutes.
  • Add chicken and continue heating in the microwave until Velveeta is melted and mixture is hot.

1/2 white onion, diced
1 teaspoon chili powder

One 15-ounce can tomato sauce
One 10-ounce can diced tomatoes and green chiles
3 cups shredded rotisserie chicken

1 1/2 cups grated pepper jack cheese

Steps:

  • In a deep skillet, heat the olive oil over medium-high heat. When the oil is hot, add the garlic, onion, chili powder, cumin, cayenne pepper, salt, pepper and turmeric. Cook, stirring often, until the onion is soft and the spices are toasted, about 3 minutes.

2 pounds skinless, boneless chicken breast halves, cut into chunks
1 (10.75 ounce) can cream of mushroom soup
1 (10 ounce) can diced tomatoes with green chile peppers (such as RO*TEL®)
1 (14 ounce) can whole kernel corn
1 (14.5 ounce) package nacho cheese-flavored tortilla chips (such as Doritos®)
1 (8 ounce) package shredded Mexican cheese blend
