1/3 cup chopped onion
2 tablespoons ketchup, divided
2 teaspoons Dijon mustard, divided
1 1/3 ounces shredded mozzarella cheese
3 tablespoons Italian seasoned breadcrumbs
4 teaspoons chopped fresh parsley
2 teaspoons grated parmesan cheese
1/3 teaspoon oregano
1/4 teaspoon black pepper
1 small egg
1/2 lb lean ground beef

Steps:

  • Preheat oven to 375 degrees.
  • Saute chopped onion for three minutes over medium-high heat.
  • Combine onion, 4 teaspoons of the ketchup, 1 teaspoon of the mustard, Mozzarella, bread crumbs, parsley, Parmesan, oregano, pepper and the egg in a large bowl.
  • Crumble ground meat over the mixture and blend well using your hands.
  • Pack mixture into a loaf pan coated with cooking spray.
  • Combine remaining ketchup and mustard and spread over the top.
  • Bake 50 minutes or until a meat thermometer registers 160 degrees.
  • Let meatloaf stand for 10 minutes before serving.

I found this on the web years ago, but unfortunately, I don't remember where. This has a ketchup glaze, but if you reduce the amount of ketchup and increase the brown mustard (which is what I do) you can't tell. This is excellent, and really doesn't have a lot of filler. I also increase the cheese. Sometimes I make this in my muffin tins. I generally serve this with mashed potatoes and dinner rolls, and my two picky sons both like it.

1 medium onion, chopped
1/3 cup ketchup, divided
2 tablespoons brown mustard, divided
4 ounces shredded mozzarella cheese
1/2 cup breadcrumbs
2 tablespoons grated parmesan cheese
1 large egg
1 1/2 lbs ground beef

Steps:

  • Preheat oven to 375°F.
  • Spray a medium skillet with cooking spray.
  • Heat over medium high heat.
  • Add onion.
  • Cook stirring occasionally, until slightly soft, about 3 minutes.
  • Mix onion, 1/4 cup ketchup, 1 Tbsp mustard, mozzarella cheese, bread crumbs, Parmesan cheese, and egg in a large bowl.
  • Add beef, mix lightly.
  • Spray a loaf pan with cooking spray.
  • Press beef mixture into pan.
  • Combine remaining ketchup and mustard in a small bowl.
  • Spread over top of meat loaf.
  • Bake meat loaf until set and cooked through, about 55 minutes.

1/2 c chopped onion
1/2 c chopped green bell pepper
6 Tbsp ketchup, divided
2 Tbsp dijon mustard, divided
1 c pre-shredded part-skim mozzarella cheese
1/2 c italian seasoned bread crumbs
1/4 c chopped fresh parsley, i have used 1tbs dried parsley
2 Tbsp grated parmesan cheese
1 tsp dried oregano
1/2 tsp ground black pepper
1 large egg, lightly beaten
1 1/2 lb ground round

Steps:

  • 1. Preheat oven to 375 degrees.
  • 2. Heat a medium non stick skillet coated with cooking spray over medium-high heat. Add onion and green pepper, saute 3 minutes.
  • 3. Combine onion-green pepper mixture, 1/4 cup ketchup,1 tablespoon dijon mustard, mozzarella and next 6 ingredients in a large bowl. Crumble ground beef over cheese mixture, mix by hand until just blended.
  • 4. Pack meat mixture into an 8x4 inch loaf pan coated with cooking spray. Combine 2 tbs. ketchup and 1 tbs. dijon mustard, spread over top of meatloaf.
  • 5. Bake at 375 degrees 1 hour or until a meat thermometer registers 160 degrees. Leat meatloaf stand in pan for 10 minutes. Remove meatloaf from pan and slice into 12 slices.
