40 packets sugar substitute (1 packet = 1/4 tsp)
1/4 cup unsweetened cocoa
2 eggs
1/2 teaspoon vanilla
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 cup semi-sweet chocolate chips

  • Add chocolate chips.
  • Put spoonfuls onto a parchment lined cookie sheet.
  • Bake at 350 degrees for 6 to 7 minutes.

Tips:

  • Use almond flour and coconut flour instead of wheat flour: Almond flour and coconut flour are low-carb alternatives to wheat flour and can help reduce the overall carbohydrate content of the cookies.
  • Use a natural sweetener: Instead of refined sugar, use a natural sweetener like stevia or erythritol. These sweeteners have a low glycemic index and will not raise blood sugar levels as quickly as sugar.
  • Add some healthy fats: Healthy fats like butter, coconut oil, and avocado oil can help keep you feeling full and satisfied after eating the cookies.
  • Include some fiber: Adding fiber to the cookies can help slow down the absorption of sugar and help you feel full longer. Good sources of fiber include chia seeds, flaxseeds, and oat fiber.
  • Don't overbake the cookies: Overbaking the cookies can make them dry and crumbly. Bake them just until they are set and the edges are just beginning to brown.

Conclusion:

These double chocolate diabetic cookies are a delicious and satisfying treat that can be enjoyed by people with diabetes. By using low-carb ingredients and natural sweeteners, these cookies can help keep blood sugar levels under control while still providing a sweet and chocolaty taste.
