Steps:
- Pat the shrimp dry with paper towels, then transfer to a medium bowl and season with salt and pepper.
- In a separate medium bowl, whisk the eggs and soda water until combined. Add the cake flour and gently whisk, making sure the batter is still clumpy. Do not overmix.
- Heat the oil in a large pot until it reaches 350˚F (180˚C).
- Add the panko bread crumbs to a shallow bowl.
- Using a slotted spoon, dip the shrimp in the tempura batter, then toss in the panko, making sure to fully coat.
- Fry the shrimp in the hot oil, 5-6 at a time, until golden brown, about 2-3 minutes. Transfer to a wire rack to drain.
- Make the glaze: Heat the oil in a medium saucepan over medium-high heat. Add the garlic and ginger and cook until fragrant, about 30 seconds, stirring frequently.
- Add the soy sauce, rice wine vinegar, brown sugar, and red pepper flakes. Stir until the mixture begins to simmer.
- In a small bowl, combine the water and cornstarch. Add the cornstarch slurry to the saucepan and stir to combine. Cook until the glaze is reduced by half and looks thick and syrupy, about 5 minutes.

- Serve the shrimp over rice and garnish with scallions.
- Enjoy!

DOUBLE CRUNCH SANDWICH STACKS
This sandwich is tasty, healthy, packed w/flavour & crunch & ideal for an elegant light lunch or even a picnic since the egg salad & slaw mixtures are prepared in advance & the sandwiches easy to assemble. My source was the California Egg Commission, but I did amend the recipe slightly, the quantities to allow for fewer servings & the prep to make it clearer. Stated times do not include hard-boiling the eggs or refrigeration time.

Tips:
- Be sure to clean the bluegill thoroughly before cooking. Remove the scales, guts, and gills.
- Soak the bluegill in a buttermilk marinade for at least 30 minutes before cooking. This will help to tenderize the fish and give it a delicious flavor.
- Use a light hand when breading the bluegill. You don't want the breading to be too thick, or it will overpower the flavor of the fish.
- Fry the bluegill in hot oil until it is golden brown and crispy. Be careful not to overcrowd the pan, or the fish will not cook evenly.
- Serve the bluegill with your favorite dipping sauce, such as tartar sauce, ranch dressing, or a Cajun remoulade.
Conclusion:
Double-crunch Cajun bluegill is a delicious and easy-to-make dish that is perfect for a casual meal or a special occasion. The buttermilk marinade and the double-breading process help to create a fish that is tender on the inside and crispy on the outside. The Cajun spices give the fish a flavorful kick that is sure to please everyone at your table. So next time you're looking for a new way to cook bluegill, give this recipe a try.
