Mexican Chocolate Glazed Doughnuts with Red Chile Peanuts image

Provided by Bobby Flay

Time 1h

Yield 6 doughnuts

Number Of Ingredients 22

3/4 cup heavy cream
2 dried chile de arbol peppers
2 cinnamon sticks
1 star anise
6 ounces bittersweet chocolate, chopped
2 tablespoons corn syrup
1/4 teaspoon pure vanilla extract
1 cup toasted peanuts
1 teaspoon ancho chile powder
Pinch of chile de arbol powder
Pinch of cinnamon
1 tablespoon brown sugar
6 homemade or prepared plain doughnuts, recipe follows
Confectioners' sugar, for garnish
1 cup whole milk
2 tablespoons sugar
1 teaspoon salt
One 1/4-ounce package active dry yeast (2 1/2 teaspoons)
2 tablespoons vegetable oil, plus more for oiling and frying
1 teaspoon grated lemon zest
2 large eggs, lightly beaten
3 1/2 to 3 3/4 cups all-purpose flour, plus more for sprinkling and flouring

Steps:

  • For the Mexican chocolate glaze: Combine the cream, chile de arbol, cinnamon sticks and star anise in a medium saucepan and bring to a simmer over low heat. Set aside and let infuse for 30 minutes. Remove the spices, return to low heat and bring to a simmer.
  • Put the chocolate in a medium bowl, pour the warm cream over and let sit for 30 seconds. Add the corn syrup and vanilla and whisk until smooth. Let cool at room temperature until thick enough to dip.
  • For the red chile peanuts: Combine the peanuts, ancho chile, chile de arbol and cinnamon on a cutting board and chop finely to incorporate. Toss in the brown sugar and spread the mixture in a shallow bowl.
  • Dip the tops of the plain doughnuts into the chocolate glaze and sprinkle with the chile peanuts. Dust with confectioners' sugar for additional garnish.
  • Bring the milk to a simmer in a 1-quart heavy saucepan, then remove from the heat and stir in the sugar and salt. Pour into a large bowl and let cool slightly.
  • While the milk is cooling, dissolve the yeast in 2 tablespoons warm water in a small bowl, stirring. Let stand for 5 minutes.
  • Stir the yeast mixture into the milk mixture along with the oil, lemon zest and eggs. Stir in 2 1/2 cups of the flour with a wooden spoon to make a very soft dough. Spread 1 cup of the flour on a work surface and put the dough on top, scraping it from the bowl with a rubber spatula. Knead the dough for about 5 minutes, incorporating all of the flour from the work surface and adding just enough additional flour (if necessary); the dough should be slightly sticky. Transfer the dough to an oiled large bowl and sprinkle lightly with additional flour. Cover the bowl with a clean kitchen towel and let the dough rise in a warm draft-free place until doubled in bulk, 1 to 1 1/2 hours.
  • Turn the dough out onto a floured surface and roll out with a floured rolling pin until 1 inch thick. Cut out rounds with a 2-inch cutter. To make ring shapes, cut out doughnut holes with a 1-inch cutter. Place on a baking sheet, cover the doughnuts with another kitchen towel and let rise in a warm place for 30 minutes.
  • While the doughnuts rise, heat about 10 cups vegetable oil in a deep 4-quart pot until it registers 365 degrees F on a deep-fry thermometer. Fry the doughnuts 2 at a time, turning once or twice, until puffed and golden brown, 2 to 3 minutes per batch. Transfer to paper towels to drain.
  • Yield: 16 doughnuts

CHILEAN DULCE DE LECHE DOUGHNUTS (BERLINES)

Chilean Dulce de Leche Doughnuts (Berlines) image

Berlines are small round doughnuts of German origin. Popular in Chile, they're often filled with dulce de leche, a kind of sweetened milk, or pastry cream.

Categories     Breakfast     Brunch     Snack     Bread

Time 3h15m

Number Of Ingredients 14

3 1/4 cups all all-purpose flour
1 tablespoon active dry yeast
2 tablespoons warm water
1 cup buttermilk (at room temperature)
3 egg yolks (at room temperature)
4 tablespoons butter (melted and cooled)
3 tablespoons light brown sugar
1 teaspoon vanilla
Optional: 1/2 teaspoon anise flavoring
1 teaspoon salt
5 cups vegetable oil for frying
1/2 cup sugar
1 tablespoon cinnamon
1 cup dulce de leche (or another filling)

Steps:

  • In a small bowl, stir the yeast into the 2 tablespoons warm (not hot) water. The mixture should turn foamy after a few minutes. Set aside.
  • Add 3 cups of the flour, brown sugar, and salt to the bowl of a standing mixture. Use the dough hook to mix well.
  • Add the melted butter, eggs, yeast mixture, vanilla, anise (if using) and buttermilk to the flour mixture. Knead with dough hook until mixture is smooth, shiny and pulls away from the sides of the bowl, about 5 to 8 minutes, adding the extra 1/4th cup of flour if dough seems too wet.
  • Transfer the dough to a lightly oiled bowl (the dough will be sticky) turning the dough to coat it lightly with the oil. Cover dough with plastic wrap and let rise in a warm place until doubled in bulk, about an hour. Punch down the dough and chill it for several hours in the refrigerator (or overnight) to make it easier to handle.
  • Roll dough out on a floured surface to a thickness of about 3/4 inches. Cut 2-inch rounds of dough with a biscuit cutter and place them on a cookie sheet lined with wax paper that has been dusted with flour. Re-roll scraps of dough and cut more rounds.
  • Cover dough rounds loosely with plastic wrap and lets them rise until puffy (while the cooking oil is heating).
  • Stir the 1/2 cup sugar and cinnamon together in a bowl.
  • In a heavy skillet or pot with tall sides, heat several inches of oil to 350 F. Drop the rounds of dough into the hot oil (working in batches), and fry them until they are puffed and golden brown on both sides, turning them as needed (about 3 to 4 minutes).
  • Remove the doughnuts from the oil with a slotted spoon and cool briefly, then roll each cooked doughnut in the cinnamon sugar mixture. (alternatively, you can dust doughnuts with powdered sugar).
  • Warm dulce de leche gently in the microwave to soften it. Place dulce de leche in a pastry bag fitted with a piping tip with about a 1/4 inch diameter opening. Make a small hole in the side of each doughnut with the piping tip, and squeeze a couple of teaspoons of dulce de leche into the middle of the doughnut. Roll doughnuts once more in the cinnamon sugar and serve.
  • Note: Doughnuts can be reheated in a 300 F oven to restore freshness.

Tips:

  • Use fresh, high-quality ingredients. This will make a big difference in the flavor of your doughnuts.
  • Make sure your yeast is active. If you're not sure, you can test it by dissolving it in warm water with a little sugar. If it bubbles up after a few minutes, it's good to go.
  • Don't overwork the dough. This will make the doughnuts tough.
  • Let the dough rise in a warm place. This will help it to double in size.
  • Fry the doughnuts in hot oil. This will help them to cook evenly.
  • Roll the doughnuts in chile sugar while they're still warm. This will help the sugar to stick.

Conclusion:

Donuts with chile sugar are a delicious and unique treat that are perfect for any occasion. With this recipe, you can easily make them at home. Just be sure to follow the tips above to ensure that your donuts turn out perfect.
