DOWN HOME SOUTHERN CORNBREAD

Down Home Southern Cornbread image

This recipe is from my late ex-mother in-law. She was a southern belle, and she didn't bake no corn cake (as she called the northern cornbread I grew up with)" not too much flour now" she'd tell me, "or you'll get cake." I like to add about a half cup of sugar to get the top dark golden brown but, here is the original recipe that...

Time 55m

Number Of Ingredients 8

2 c white cornmeal
1 1/2 c all purpose flour
1 tsp salt
2 tsp baking powder
1 tsp baking soda
2 large eggs
4 Tbsp bacon drippings
2 c butter milk

Steps:

  • 1. Pre-heat oven to 425 degrees.
  • 2. My mother in-law used a huge cast iron skillet but I used a 13x9 baking dish. What ever you have on hand. Put bacon drippings in pan and place pan in oven. You can substitute vegetable oil or butter for the bacon drippings but everything is better with bacon. ;)
  • 3. stir the dry ingredients together in a large bowl.
  • 4. Beat eggs then add them to buttermilk.
  • 5. Add egg mixture to dry ingredients and stir just till smooth, don't over do it.
  • 6. Pull hot pan out of oven and pour hot bacon drippings into mixture. stir till mixed.
  • 7. Immediately pour mixture into hot pan and bake for about 40 minutes or until the middle springs back when pressed.
  • 8. Slather on the butter and enjoy! :D

DOWN HOME CORNBREAD

Another recipe from my Nana. To this day I'll go to a restaurant that serves corn bread or muffins, take one bite and 'choke' it down because it just isn't the same. To make her cornbread dressing at Thanksgiving she would add the spices to the cornbread before baking, The addition made ALL the difference in the world to this...

Time 35m

Number Of Ingredients 8

1 c all purpose flour
1 c yellow cornmeal
1 Tbsp baking powder
1 Tbsp sugar
1/2 tsp salt
1 c milk
1/4 c crisco oil
1 egg

Steps:

  • 1. Preheat the oven to 425, and spray a 8x8 baking pan with non stick spray. (I use Pam with butter or olive oil)
  • 2. In a large mixing bowl, mix all your dry ingredients together. In another bowl, whisk the egg, milk, and oil together
  • 3. Make a 'well' in your dry ingredients and pour in the egg mixture and stir until completely incorporated.
  • 4. Pour into your prepared pan and bake at 425 for 25 minutes

Tips:

  • When making cornbread, use fresh cornmeal for the best flavor and texture.
  • Buttermilk adds a tangy flavor and helps to make the cornbread moist and tender.
  • Be careful not to overmix the batter, as this can make the cornbread tough.
  • Bake the cornbread in a preheated oven for the best results.
  • Let the cornbread cool slightly before serving, so that it has a chance to set.
  • Cornbread can be served with a variety of toppings, such as butter, honey, or chili.

Conclusion:

With its simple ingredients and easy-to-follow instructions, this recipe is a great way to experience the classic flavors of Southern cooking.
