2 (2 1/2 lb) chicken, cut into serving pieces
1 cup flour, seasoned with
1 teaspoon salt, and
fresh ground black pepper
2 tablespoons butter
1 tablespoon oil
12 tablespoons white pearl onions
12 small new potatoes, peeled
8 mushrooms, cut into quarters
6 slices bacon, fried until crisp and crumbled
2 cups chicken broth
1 tablespoon cornstarch, dissolved in
2 tablespoons cold water
2 tablespoons finely chopped parsley

Steps:

  • Dredge chicken pieces in seasoned flour. Heat the butter and oil in a large skillet and fry the chicken until golden brown. Transfer the chicken to a casserole.
  • Add onions and potatoes to the skillet and cook until lightly browned.
  • Shake the skillet occasionally to prevent potatoes from sticking.
  • Transfer onions and potatoes to the casserole.
  • Add mushrooms to the skillet and cook over moderately high heat for 4 minutes.
  • Place mushrooms in the casserole.
  • Add crumbled bacon and chicken broth.
  • Cover the casserole and place in a 350º oven for 50 minutes.
  • Thicken juices with cornstarch dissolved in cold water.

1 (10 1/2 ounce) can cream of mushroom soup
1 cup sour cream
36 Ritz crackers (crushed, 1 sleeve )
1 tablespoon poppy seed
1/2 cup butter, melted

Steps:

  • Preheat oven to 375.
  • Hashbrown layer-.
  • mix hashbrowns, cream of celery soup, 1 cup sour cream, onion, pimento, and cheese.
  • Layer this mixture in a 15 x 11 inch casserole dish.
  • Chicken layer-.
  • Mix chicken, cream of chicken soup, cream of mushroom soup, 1 cup sour cream.

You dont have to fry everything in the bacon grease, it does take a little away from the flavor, but it tastes great even if you use olive oil, vegetable oil or butter. Cooking time includes the baking time as well the frying you do during prep.

2 large chicken breasts
1 medium vidalia onion (Sweet)
5 slices bacon
2 large potatoes
1/2 cup canned mushroom (1 Cup Fresh)
1 (10 3/4 ounce) cream of chicken soup
3/4 cup chicken broth
1 tablespoon melted butter
salt
pepper
garlic powder

Steps:

  • Preheat oven to 425 degrees.
  • Cook the bacon; crumble and set aside; reserve bacon grease.
  • Peel and cube the potatoes; fry potatoes in bacon grease.
  • Dice the onion; season with salt, pepper and garlic powder and fry in the bacon grease.
  • Fry the mushrooms in the bacon grease.
  • Coat the chicken breasts with melted butter and season with salt and pepper and grill (I used the George Foreman grill).
  • After the chicken is cooked, cut into cubes.
  • Take Cream of Chicken soup and mix with 3/4 cup broth and season with pepper to make a sauce.
  • In an 8x8 glass dish combine chicken, mushrooms, onions and potatoes. Top with sauce and mix it all up so everything is coated in the sauce.
  • Bake for 30 minutes covered with foil.
  • Remove foil, top with crumbled bacon and bake an additional 10 minutes, uncovered.

olive oil
5 whole skinless chicken breasts (approx 150g-175g a breast)
2 leeks, sliced
4 garlic cloves, crushed
200 g button mushrooms, some halved and some quartered (I use brown button mushrooms as I prefer them but regular are fine.)
1/2 cup dry white wine
1 cup water
3 teaspoons Dijon mustard
1 1/4 teaspoons chicken stock (concentrated, I use a very dense chicken stock paste so if using powder you may need to add a little)
2 medium carrots
100 g sugar snap peas
1 tablespoon fresh thyme leave
1 tablespoon fresh parsley, finely chopped
1 cup cream
2 teaspoons cornflour
pepper

Steps:

  • I have written above to chop the button mushrooms both halved and quartered. This is because they vary in size, in that if they are a little bigger I tend to quarter them and for the smaller ones just halve them. If they are really small I just throw them in whole. So adjust for what you have, if all are really small don't bother cutting them.
  • Cut chicken into approximately 1 inch pieces. Heat a small amount of olive oil in a pan and cook chicken in batches until browned all over. Remove and set to one side and wipe pan clean.
  • Pour about 2 tablespoons more of olive oil to pan and add the sliced leeks, cook for 2-3 Min's and then add the garlic, cook for a minute more (I do it this way so I do not burn the garlic.) Now add the mushrooms cook for a further 2-3 Min's.
  • I have a large, deep, fry pan that has a lid so I cook it all in the same pan, if you don't you will want to transfer the leek and mushroom mixture to a large saucepan before continuing.
  • Add the white wine, water, mustard, chicken stock, thyme and parsley, stir. Return chicken and cover, let it simmer for 20 Min's or until chicken is cooked through.
  • Boil or microwave carrots and sugar snap peas until tender.
  • Add cream to chicken, mix a little water with cornflour and add. Add the carrots and sugar snap and stir over heat until mixture boils and thickens.
  • Serve with either boiled new potatoes, mash or rice.
  • Also the beauty with a casserole is that there are no hard fast rules, so add whatever vegetables you want. Either your favourite or what you have on hand. This is also a great way to use up leftover roast chicken or turkey and it tastes great.

This is my mother-in-law's recipe, and one of my husband's favorite meals! It is a warm and delicious comfort food casserole. Note: Using the blue package of Herb Seasoned Pepperidge Farm stuffing is a MUST! It sets up the whole flavor of the meal. If you are trying to clear out the cupboard or are unable to get the blue package, then you'll need to use two of the standard sized boxes (8 oz.) of stuffing, preferably herb seasoned.

1 (16 ounce) package Pepperidge Farm stuffing (herb seasoned-blue package, see note above)
1/2-1 cup butter

1/2 small onion, chopped
4 cups cooked chicken, chopped (rotisserie chicken works great!)

8 bone-in chicken thighs, skin pulled off and discarded
1 tbsp oil
5 spring onions, sliced
2 tbsp plain flour
2 chicken stock cubes
2 large carrots, cut into batons (no need to peel)
400g new potato, halved if large
200g frozen peas
1 tbsp grainy mustard
small handful fresh soft herbs, like parsley, chives, dill or tarragon, chopped

Steps:

  • Put the kettle on. Fry 8 bone-in chicken thighs in 1 tbsp oil in a casserole dish or wide pan with a lid to quickly brown.
  • Stir in the whites of 5 spring onions with 2 tbsp plain flour and 2 chicken stock cubes until the flour disappears, then gradually stir in 750ml hot water from the kettle.
  • Throw in 2 large carrots, in batons and 400g new potatoes, bring to a simmer. Cover and cook for 20 mins.
  • Take off the lid and simmer for 15 mins more, then throw in 200g peas for another 5 mins.
  • Season, stir in 1 tbsp grainy mustard, the green spring onion bits, a small handful of fresh soft herbs and some seasoning.
