DR SPICY BBQ PORK

Dr Spicy BBQ Pork image

I served this at my son's graduation party and kept it warm in a slow cooker after roasting it in the oven. The pork is superb by itself or piled high on rolls. For a classic combo, serve it with warm biscuits and coleslaw. -Michelle Gauer, Spicer, Minnesota

Time 6h10m

Yield 18 servings

Number Of Ingredients 6

2 onions, peeled and quartered
1 whole pork butt (pork shoulder roast)
Salt and freshly ground black pepper
One 11-ounce can chipotle peppers in adobo sauce
2 cans pop (I use Dr Pepper)
4 packed tablespoons brown sugar

Steps:

  • Preheat the oven to 300 degrees F. Start by placing the onion quarters in the bottom of a pot. Sprinkle the pork with salt and pepper, and then place on top of the onions. Pour the chipotle peppers over the top, and then crack open the cans of pop and pour them over the whole thing. Add the brown sugar to the liquid and stir.
  • Cover the pot, put in the oven and cook for at least 6 hours, flipping the roast 2 or 3 times during the cooking process. When it's done, the pork will be dark and weird and wonderful. It'll also be fork-tender. That's when you know it's done.
  • Remove the meat from the pot and shred completely. Then return the meat to the pot and keep in the juice until you need it. Divine!

DR. PEPPER BARBECUE SAUCE

Dr. Pepper Barbecue Sauce image

Provided by Elizabeth Karmel

Categories     Sauce     Blender     Garlic     Sauté     Quick & Easy     Backyard BBQ     Vinegar     Simmer

Yield Makes 5 cups

Number Of Ingredients 12

4 tablespoons (1/2 stick) unsalted butter
1 large yellow onion, chopped
4 cloves garlic, chopped
1 cup ketchup
3 tablespoons tomato paste
One 12-ounce can Dr. Pepper
1/2 cup cider vinegar
1/3 cup Worcestershire sauce
1/2 cup packed dark brown sugar
2 teaspoons ancho or New Mexican chili powder
1 teaspoon fine-ground white pepper
1 teaspoon kosher salt

Steps:

  • 1. In a heavy saucepan, melt the butter. Sauté the onion and garlic in the butter until translucent, about 10 minutes. Add all the remaining ingredients and simmer for about 15 minutes, until the flavors have blended. Continue cooking until the sauce begins to thicken, 20 to 30 minutes. Taste and adjust the seasonings with salt and pepper if desired. Remember, the ribs will have plenty of spice rub on them, so don't overseason the sauce.
  • 2. Let the sauce cool for about 10 minutes or until it is warm but no longer "boiling" hot. Puree with an immersion or traditional blender-this will make the sauce thicker. Let cool. The sauce will keep, tightly covered, in the refrigerator for up to 2 weeks.
  • 3. Brush it on food 5 to 15 minutes before the cooking time is finished. If desired, serve extra on the side.

Spicy Korean BBQ-style Pork Recipe by Tasty image

Here's what you need: boneless pork shoulder, onion, green onion, garlic, ginger, korean red chili paste, red pepper flakes, soy sauce, rice wine, sesame oil, sugar, black pepper, canola oil, sesame seed, rice

Provided by Alvin Zhou

Categories     Dinner

Yield 4 servings

Number Of Ingredients 15

1 ½ lb boneless pork shoulder, or pork belly, chilled or frozen for easier slicing
½ onion, sliced into thin strips
3 stalks green onion, sliced into 2-inch (5 cm) pieces
3 cloves garlic, minced
1 teaspoon ginger, minced
¼ cup korean red chili paste, gochujang
1 teaspoon red pepper flakes
¼ cup soy sauce
3 tablespoons rice wine
1 tablespoon sesame oil
1 tablespoon sugar
1 teaspoon black pepper
1 tablespoon canola oil
sesame seed, to garnish
rice, to serve

Steps:

  • Slice the pork into extremely thin slices, then transfer to a large bowl. This works best when the pork is super cold or partially frozen.
  • Add in all of the ingredients besides the canola oil, then mix until the pork and the vegetables are evenly coated with the marinade.
  • Cover and marinate in the refrigerator for at least 30 minutes.
  • Heat the oil in a pan over high heat, add pork, being sure not to crowd the pan, stir-fry the pork in batches until slightly crispy on the edges, about 3-4 minutes. If you're using pork belly, cook for a bit longer, around 6-7 minutes.
  • Sprinkle a bit of sesame seeds on top, then serve with rice!
  • Enjoy!

Tips:

  • Choose the right cut of pork: For pulled pork, a pork shoulder or Boston butt roast is the best choice because it has a lot of marbling and connective tissue, which will break down and become tender during the cooking process.
  • Use a good rub: The rub is what gives pulled pork its flavor, so don't skimp on the ingredients. Use a combination of spices, herbs, and brown sugar.
  • Cook the pork low and slow: Pulled pork should be cooked at a low temperature (around 225 degrees Fahrenheit) for a long time (at least 8 hours). This will allow the connective tissue to break down and the meat to become tender and juicy.
  • Shred the pork correctly: Once the pork is cooked, it should be shredded. Use two forks to pull the meat apart into small pieces.
  • Serve the pulled pork with your favorite sides: Pulled pork is a versatile dish that can be served with a variety of sides. Some popular choices include coleslaw, baked beans, and potato salad.
