1 tablespoon very finely minced fresh ginger
1/2 teaspoon crushed red pepper flakes
1 teaspoon dark sesame oil
1/2 cup dry black beans
1/2 lb vermicelli or 1/2 lb capellini
3 -4 cups cold chicken, shredded or diced

1 carrot, julienned or grated
1/4 cup finely chopped fresh coriander
1 lime
2 teaspoons granulated sugar
1 tablespoon soy sauce
1/2 teaspoon salt

Steps:

Tips:

  • To make the dragon noodles, use a wide and deep pan so that the noodles have enough space to move around and cook evenly.
  • Don't overcrowd the pan with noodles, or they will not cook evenly.
  • When boiling the dragon noodles, add a little salt to the water to help them retain their flavor.
  • Once the dragon noodles are cooked, rinse them with cold water to stop the cooking process and prevent them from becoming sticky.
  • To make the chicken, use boneless, skinless chicken breasts or thighs. Cut the chicken into thin strips so that it cooks quickly.
  • When stir-frying the chicken, use a high heat and a little oil to help it brown quickly and evenly.
  • Don't overcook the chicken, or it will become tough and dry.
  • To make the sauce, use a combination of soy sauce, oyster sauce, rice vinegar, and sugar. Adjust the amount of each ingredient to taste.
  • Add the sauce to the chicken and noodles and stir-fry until everything is evenly coated.
