6 cups all-purpose flour
4 tablespoons baking powder
1/4 teaspoon salt
3 sticks cold butter, cut into pieces
3 1/2 cups whole milk
Melted butter, for brushing, optional

Steps:

  • Preheat the oven to 400 degrees F.
  • Place the flour, baking powder and salt into a food processor and pulse a few times to combine. Add the butter and pulse until the dry ingredients and the butter are mostly combined. (Alternatively, cut the butter into the dry ingredients with a pastry cutter.) Drizzle in the milk and pulse (or stir) just until the dough comes together. Do not over mix.
  • Using a regular table spoon, or large spoon, drop spoonfuls of the mixture onto baking trays and bake until nice golden brown, 20 to 25 minutes. If desired, brush with melted butter after you remove them from the oven.

2 teaspoons kosher salt

1 stick cold salted butter, cut into bits, plus 1/2 stick (4 tablespoons) salted butter, melted
1/2 cup shortening
1 cup grated Cheddar
1 1/2 cups buttermilk
8 to 12 breakfast sausage patties
8 to 12 large eggs
Hot sauce, to taste
8 to 12 slices white Cheddar

Steps:

  • For the biscuits: Preheat the oven to 450 degrees F.
  • Whisk together the flour, powdered milk, baking powder, sugar, cream of tartar, salt and cayenne pepper in a medium bowl. Using a pastry cutter, cut the butter bits and shortening into the dry mixture until blended thoroughly. Mix in the cheese, then fold in the buttermilk until the dough comes together.
  • On a lightly floured surface, turn out the dough and press into a circle 1 to 1 1/2 inches thick. Cut out circles with a biscuit cutter or a glass. Place the biscuits in cast-iron skillets, then brush the tops with the melted butter. Bake until golden brown, 10 to 12 minutes, then set aside to cool a little.
  • For the sandwiches: Next, add the sausage patties to a skillet over medium heat and fry until cooked through. Set aside and keep warm. In the same skillet, fry the eggs, turning them over to cook the yolks through.

1 kg flour (the best quality)
1/2 cup olive oil
28 g baking ammonia
200 g sugar
2 cups ouzo (maybe more)

Steps:

  • Mix the flour with the olive oil into crumbs.
  • Dissolve the sugar to 1/2 cup of ouzo and the baking ammonia to a little more of ouzo.
  • Mix the two previous liquids with the flour and put as much ouzo to make a firm dough.
  • Then its the difficult part. Knead the dough by hand in very little amounts in order to make the dough fluffy. Maybe it can be done in a food processor little by little.
  • When make the cookies. Pinch off small egg-size pieces of dough and roll them under the palm of your hands into a 9-inch rope about the thickness of your finger. Bring the two ends together and pinch them closed.
