1 (1-pound) eel
1 cup all-purpose flour, plus more for dredging
1 teaspoon seafood seasoning (recommended: Old Bay)
1 teaspoon Cajun seasoning
3 teaspoons salt
1 cup blended oil
1 teaspoon chopped garlic
1 teaspoon chopped onion
1 teaspoon freshly ground black pepper
1/2 cup white wine (recommended: Chablis)
2 teaspoons butter

Steps:

  • Clean and skin the eel, and then cut it into chunks. In a large bowl, mix together 1 cup flour, seasonings, oil, garlic, onion, and pepper. Add the eel to this mixture and then marinate in the refrigerator for 1 hour.
  • Dredge the marinated eel in flour. In a saute pan over medium heat, sear the eel until golden brown, about 7 minutes. Add the white wine and cook until reduced by half. Add the butter and cook until it melts and browns slightly. Divide the eel among 4 serving plates and top with the butter sauce.

8 ounces eel
3 pickled green chilies, sliced thin
3 pickled garlic cloves, sliced thin
3 ounces celery, cut in 2-inch sections
2 cups oil
5 slices pickled ginger
1/2 tablespoon chili, nam yuey
3 tablespoons stock, any will due
1/2 tablespoon soy sauce
1/2 teaspoon sugar
1/2 teaspoon vinegar
pepper

Steps:

  • clean, rinse, and cut eel.
  • heat oil in a wok fry eel until dry and crispy remove and drain.
  • save 3 tbls of oil in pan reheat.
  • stir fry ginger garlic and chili nam yuey to flavor oil about two minutes.
  • add eel, celery, soy sauce, and sugar continue to stir fry.
  • when ingredients are well mixed add stock keep boiling until there is very little liquid left.
  • add vinegar mix well, remove from heat sprinkle with pepper on top and serve immediately.

7 ounces dried shiitake mushrooms, stems removed
6 cups water
1/3 cup canola oil, for frying
1/2 cup cornstarch
3 scallions, thinly sliced, divided
1 inch piece ginger, minced
1/3 cup soy sauce
1/4 cup sugar

Steps:

  • In a large bowl, soak mushrooms in the water for 10 minutes. Drain and sliced in 1/3" slices, then squeeze dry.
  • Heat 2" oil in a 14" skillet. Toss mushrooms with cornstarch and fry till crispy. Remove to drain on paper towering.
  • Drain off all but 2 T. of the oil. Add ginger and 3/4 of the scallions. Cook and stir for 30 seconds, till fragrant.
  • Stir in the soy sauce and sugar and cook and stir until syrupy, 1 or 2 minutes.
  • Add mushrooms back to skillet and toss to coat and cook 1 minute. Garnish with remaining scallions. Serve as a side to rice and other veggies.
